Really nice clean work as always, I look forward to new videos from you to see what is next. I was almost hoping you were going to make a nice hard wood edging for around the harth, I did that one time with my cousin in New Zealand and it gave it a really nice defined edge and a bit softer than kicking stone too when it inevitably happens, regardless awesome work, keep it up

Next time just get a wooden shim and use your grinder to shape it to the dimension you need. Also, you should have taped the edges around the joints then you wouldn't need to worry about overspill. Just apply the filler, smooth it in to force it fully into the joints then pull the tape. It will leave clean edges. This trick works for caulking around anything too. It will leave a nice clean edge.

Are you going to grout the stress relief cracks in concrete floor? If so what will you use for grout or caulk?

Man! Every time I see you put your knees on the concrete, it KILLS me! lol I would be in SO MUCH pain. I'm not a doctor or anything and not that you NEED them, but I just wonder if wearing even light knee pads might do any preventative/long term good? /shrug Might be something to look into. You are going to wish you had used crack isolation membrane over the control joints in the concrete. When the concrete cracks so will the hearth. Don't believe me? Walk in any shopping mall in the country and you will see what I am talking about. It may not be tomorrow or next week but they will crack or break bond. Tile, no matter how thick, will not hold the building together. Hindsight is a bitch.
