Great videos Matt, I'm slowly working my way through them. I appreciate the time you spend creating content to help educate on sharpening and the systems you use. Interesting that you mentioned that you go to the edge pro to finish folding knives. I don't have an edge pro or angle guide type of sharpener, but I have found that it works well to do the first two grit progressions on the work sharp to get a good burr and refine the edge. Then I go to a 1000 and 2000 grit ceramic whetstone, finishing with a leather strop and I find that gives me a really keen edge without spending a huge amount of time. I could probably get just as sharp on the work sharp but I like the feel of sharpening on a stone. A problem I had on the work sharp was rounding over the heel of the blade, the same way as you describe on the tip. I just had to make sure that I started with the heel of the blade at the edge of the belt and not in the center of the belt. I also may have been rocking the blade a little and not keeping it perpendicular to the belt.

I use my K/O with a leather belt and the Tormek Paste to hone after using the Tormek T-8 but I also use it for many other things in my sharpening business. I recently added a 1000 Grit CBN Wheel to my Tormek and now grind dry and let me tell you it's a total game changer. It saves me a tun of time and the knives are amazingly sharp for under $200 bucks it's the best investment in gear ever if you already own a Tormek. I wish I had gotten it sooner. Do a video on that cool down draft table my K/O location in my shop creates the most mess.

Several guys in the Guild are using the CBN wheels on the TAS. I certainly see the advantages. Thanks for your probe on the downdraft table. I'll be including it in a video in the near future.

out of curiosity, if going with CBN wheel, would a slow bench grinder be cheaper comparing to tormek price tag? or the jig of tormek provides great value?

@@leox8888 the Tormek T8 spins far slower than a low speed grinder. I personally like the Tormek for sharpening because IMO it’s the perfect speed for very controlled sharpening. A low speed grinder with CBN is great for large metal removal. So it’s awesome for cutting new bevels or removal of large chips but for final sharpening the Tormek is the way to go. Plus it’s nice to have the option to grind in water when I want to. A 350 CBN for a Tormek and a 1000 CBN would be a great combination and it’s very easy to change the CBN on the Tormek. when grinding dry. If I was starting out I would get a Tormek T8 and those two CBN Spartan Wheels if I could only afford one wheel I would get the CBN 1000 you can sharpen almost everything you will encounter with that and if you have a 1x30 belt sander you could just use a 120 cubittron belt for preping knive and fixing chips before doing final sharpening on the Tormek. I could run my entire sharpening business with a 1x30 and a Tormek. I’m not a fan of 1x30 for everything but it’s a must have for many reasons and the are so cheap every sharpener should own one.

Hey Bradlee, I've been running three of them pretty hard and haven't had any issues. I have heard of some motors stopping but I've also heard that the customer service at Work Sharp is exceptional. Hope that helps.

what’s the best way to sharpen a bread knife on the Ken onion belt sharpener? They say to use the purple 6000 grit and just hit the back side of the knife but when I test it on my Bess scale I don’t see any improvement

It’s like you are using two Completely different Systems to do one job.... using the vertical 1x30 and then using the worksharps with a different angle system...Would it be better if you had another work sharp with the same grit as the 1x30 to replace that inconsistency?

I use multiple systems and jump often. In my shop I have a 1x30 , Ken Onion, Tormek T8 ,Jet low speed Grinder with CBN wheels and a Wicked Edge130 and a Twice As Sharp. If you sharpen a lot you will find that having multiple systems can be a big advantage. And it's not hard to go from one to another. Certain machines excel at some tasks. And even though many sharpening systems do a lot they don't always do a lot well.

I need to do a lot of my own stuff but if I buy equipment I might as well just offer some kind of service.....It’s kind of funny how you get back to me but the guy who is running the club can’t get back to me after three days..... 75 years too old for this...Thanks anyway

Hey Ron, thanks for your comment, sorry for not getting back to you sooner, and you can drop the attitude. Yes, as the other guy mentioned, the 1x30 has some advantages over the BGA. Every person needs to find the system that works for them and perpetually experimenting and exploring new ideas is how we evolve our art and practice. Be well and be kind, brother.
