Actually,Sea Urchins are found in other countries as well,but i think they are different types,not as fat as ours,seen someone pulling some out of the ocean on a video a while back.

We’re not acting like that at all, this video is showcasing what Tora Collective are doing. A lot of people watching this won’t have the ability to dive for koura or pāua themselves so purchasing it from a business like Tora Collective is a way they can get the kaimoana fresh and in a sustainable way and cook it at home themselves. Most of the good stuff goes offshore 😭 Unless you’re diving for it yourself most of the crayfish and paua that’s available is the lower quality fish at exorbitant prices which is such a shame. May I ask if you’re eating the roe from the female “Kenna” (spelling?), how are they sustainable also?

Hi 5cats 2kids! The orange bits are really the reproductive organs of both the male and female Kina. But we tend to call it the roe here- I guess because it sounds better than gonads 😆 They’re sort of considered a pest because there are so many of them and they eat kelp which destroys the fish nurseries. @@ChasingaPlate yes, she would add bits of cauliflower , corn it was like a relish and went perfect with pork😋😋😋...she only used the Hua and stored it in a like small keg and stored it in a dark cupboard it lasted for months. Every time whanau came around she would send them home with a couple of jars. Her last batch she made she ended up sending us back to Sydney with 10 jars😁My mum use to make it too but she made smaller batches and used the paua but we kept that in the fridge it generally didn’t last long as we all loved it.

I live in New Zealand we have a place called fish in chips in whangaporoa and they sell more than fish and chips they sell burgers they sell hot dogs and chicken burgers and even donuts!

*_crayfish_* - I've eaten quite a bit of lobster over the years and while rock/spiny lobsters are plentiful on both U.S. coasts it seems the large claw "Maine" or "Canadian" varieties are the most popular. I did have a tasty crayfish in Sydney so perhaps it's similar to the ones you guys highlighted. *_sea legs_* - So glad Thomas finally got to dry land. His demeanor improved by about 10 fold. Ha! *_kina_* - Funny that Sheena called it the roe. No one really likes to say "reproductive organs" or "gonads." Until chefs come up with a universal term, I guess roe is as good as any. 😀 *_Excellent day, guys. Best wishes to Claire and Troy. Awesome couple indeed._*

🤣🤣🤣 he had a cheeky spew on the boat! Neither of us were feeling too good I’ll tell you that much Tosh! Thomas said I should have just said gonads 😆 I’d love to have a taste of the large claw Maine lobster. It does seem like the more popular lobster for eating- I didn’t even realise the spiny lobsters were plentiful on the US coast! This was such a special day, one of those meals you remember forever. Troy and Claire are starting delivery all over NZ soon so we’re definitely going to order so our family can get a taste of the magnificent seafood too! Thanks for watching and commenting Tosh. Yes, spiny lobster harvesting is huge in California but nearly 100% is exported to China because they pay top dollar. Great for the local lobster industry. I used to live in Miami, Florida where spiny lobsters are even more plentiful and available to local consumers. Delicious. Then again I love all crustaceans. I'll take you on a crustacean trip up the east coast. Florida - spiny lobsters, stone crabs ($$$) South Carolina - shrimp North Carolina - shrimp, blue crabs Virginia, Maryland - blue crabs Massachusetts, Maine - red lobsters (large claws) 😀

Man you guys got so much footage on this NZ road trip, us non digital peeps just have no idea how much footage it takes to splice an 18min vid but you certainly noticed it in this vid just how much filming you did. Secondly how freaking lucky to meet Troy and Claire AND to be invited into their home to enjoy a feast fresh from the sea and they still loved you even after you almost dropped your sea urchin toast!! 😂 But what l dont understand is do they go out in the boats only to fill orders do they? It seemed only a small batch haul but lm thinking (correct me if lm wrong) that this means that they always provide a premium product freshness ocean to plate. (Yes l do know what sustainability means) its definitely a labour of love!!! Tora Collective are one of those businesses that we never even think about being affected by Covid, no restaurants open or reduced pax, no tourism, means reduced demand for there product. Get eating NZ you lucky lucky Kiwis. 💞

🤣 I felt so bad! Splat 🤪 And yep, that’s exactly right, they only fish to order so the seafood is fresh as fresh gets! It’s such an amazing business model. We felt so, so, so lucky to be invited into their home- they are such cool people and so inspiring. Can’t wait until they start home orders up in November! @@ChasingaPlate lol at least i wasn't eating toast or id be dreaming of putting urchins on it 😂. They definitely are inspiring. Unfortunately bad weather forcasts and Sunday work will probably stop bbq plans but i did get to cook up some whiskey, cola sticky bbq pork ribs on the weber during the week, which were a yummy experiment.

Oh dang it! Those ribs sound AMAZING! I’m a mega rib fan but don’t cook them up very often. Was the recipe a keeper? They sound deliciously sticky and sweet 🤤

@@ChasingaPlate its raining already so i was right there. The ribs recipe was definitely a keeper though im going to do a slightly different smokey bbq sauce next time. Im the same though dont cook ribs that often.
