Its crazy to me that does Michelin tacos are a thing now. I remember making tacos like this with my uncles here in chicago. We tail gated at soldier field for a mexico vs us soccer game. As men, who really never grilled before, we just brought arachera and tortillas and salt. One uncle brought some jalapeños from hes garden. Man them tacos smacked. We ended up making tacos like that the rest of our lives. The simplicity was the key.

I live in Southern Cali and like you, we have great Mexican food choices, but I want the one he's having! Me booking a flight to Mexico would make it one expensive ass burrito.

Having a burrito in Mexico City is like having a NY style bagel in Miami. Burritos are more northern Mexican food, Mexican food is very regional. Hope you were able to have pambazos, barbacoa, tortas de chilaquil, huaraches, and al pastor, those are more typical for CDMX. 🇲🇽

Other countries might try to replicate a food but sometimes they can't replicate it 100% because the ingredients might be really hard to come by in other states so they have to improvise with what they have.

I went to Tacos El Califa de Leon before the michelin star. Incredible tacos, simplicity taken to the next level. Gaonera meat was the best, together with the AMAZING salsas !

im born and raised in cdmx and its quite know by us locals that chinatown is not really authentic anymore and rather more than a turists spot (in the sense that chinese inmigrants and actual bussiness are not there anymore) most of the real chinese food is located in the metro viaducto or juarez area so if you ever comeback check those spots up!

The burrito you tried is called Burro Percherón (named after the huge horse breed) because they're so big. They're originally from the town of Hermosillo in the northwestern state of Sonora, just south of Arizona. You should visit Hermosillo and try the best beef and some of the best food in the country.

My dad used to tell me when eating tacos in Mexico it's common for people to be disappointed in the blandness of the food because they're used to expensive seasonings being used in USA. He told me when someone tried complaining to a chef that the food she got doesn't take like Mexican food he said "You're in Mexico, everything is Mexican."

My mom makes a salsa like that she uses Chile Cascabel, Chile Pasilla and Dried Red Arbol Chiles. She makes it in our molcajete (volcanic mortar and pestle), it’s the best thing ever!!!!!!

The burro place you went to is actually burros percherones which are Sonora style and usually made in tortilla sobaquera which is a really big and thin tortilla. I’ve been there when I visited Mexico city and the flavor is pretty authentic to Sonora since the owner actually gets most of the ingredients shipped from Sonora. They have other great stuff like beans with queso fresco and a traditional Sonora (specifically hermosillo city) dessert called coyota. Also as a side note they use Sonora's meat which is one the biggest states that export meat in Mexico and the quality is pretty good.

@@missfreakk1416 Yeah is traditional Sonora food, since we are well known for carne asada, burros percherones etc and mostly flour tortillas lol. It’s called Sonora Street Food. I recognized it ‘cause of the Que pinshi shulada sign 😂 and is pretty authentic flavor, when I’m in Mexico city and miss the taste from home and flour tortillas that are not tía rosa. I go and order a burro and a side of refried beans with queso fresco and a coyota or coricos. The location I know is in Roma sur but I think they have another one I just never been there.

I think you have to remember the Michelin personnel are usually people of a certain pallete. Of course they would like the most basic taco there is out there. Mexicans, like myself, know you need cilantro, onion, and salsa at a minimum, or it's not a real taco. I used to think the Michelin stars were indicators of great restaurants until I went to a few and then I understood that the people rating those places did not have the best palletes.

That michelin star taco i saw in some youtube clips.... I hear the moment they got the michelin star, they crank up the price and use less fresh ingredients. Something like that But in the video the taco is clearly fresh. I dont know how this place compares to other taco nearby. So, the Michelin thing has a story. The Michelin people weren't looking for street food, but they decided to do it last minute, so, they asked the person in charge of tourism or something in CDMX and he gave only five places of reference, so, they only tried 5 taquerías, and apparently, that was the best one.

Go to Mexicali in Baja California. It has got the biggest Chinese population in Mexico. Some says its Chinese food and town rivals that of San Francisco. Also, burritos in CdMx aren't a thing. Next time, try pambazos.

I don't really see why the first taco shop would get a Michelin star. The only thing about it was it was serving maybe higher quality cuts of meat. It's also really expensive by Mexico standards. $4 dollars USD for a taco is crazy.
