The sugar caramel reduces the heat of the chillies. Whenever you want relief from the heat of chillies, put a flat half teaspoon of sugar in the mouth and let it sit there till the heat goes away.

I've never heard of anyone using pure caramel as the base for a dipping sauce. Can you even taste any of the ingredients besides sugar? I'm also not sure if the sauce you dripped onto the rolls was the sauce you made. The final sauce is uniform in color but the sauce in the pan was a darker brown with more splotches of peppers.
