I completely agree with you. And I speedrun all classic raids as a priest. You tend to just max rank flash heal snipe most of the time. Longer fights aside like split size onyxias for gear, ragnaros etc. where you need to conserve mana.

I will always maintain that "of the owl" gear is best when leveling. Many like pure spirit or green stats. But I prefer straight up mana pool and spirit

I've always been a fan of stacking Spirit & going more moderate with +Heal at 60 on my Priest & Druid healers. Always worked well for me in dungeons & raiding, back when I played original Vanilla, TBC, & WotLK back in the day. I've lost count of the Priests who stack +Heal like crazy to the exclusion of Spirit & go OOM prematurely during encounters.

my guild and I server-first all 6 phases of raids including the 20 mans in classic 2019, I was a resto druid and plus healing was important, especially now that the buff cap has been removed and rejuvenation can be cast freely

Rejuvenation is still bad for non-tanks? Right? The healing is just going to get sniped and wasted on other raid members.

Assuming you can drink walk int is just as good for speedrunning. Healers just dont understand the basic math of how their stats interact and follow guides like lemmings. The shorter fights get the better int gets to a theeshold where you cant mathematically spend all your mana in the fight length. Classic has short fight lengths and max rank spells cost a large amount of mana. Qed. Int also makes your spirit better and vice versa.

Is the spell critical chance completely negligible? It's such a tiny number it is probably best to ignore it I guess.

Yeah, I would say it's not really something that we're really considering overall if we're looking at just the difference in crit chance from intellect alone. It's definitely not bad to have 2-4% additional crit, but it definitely falls under the 'nice to have' category.

Crit can overheal. A lot of the time will a crit overhealing or just heal snipe, since you can not predict you will crit. It is hard to relay and you need to be sure your tanks not die just because you did not got a crit.

But tanks are always trying to speed run, even if you don't want to. You end up needing to go +healing.

If your tank is moving too fast, say something or let him die and then he will get the point. You’re a healer, you’ll always be able to find a group. If you say you need mana and they pull anyways, that’s on them not you.

I would look at it like this. Most guilds are obviously not intentionally trying to play raids slow, right? However, just because your average guild is attempting to push the pace a bit and optimize to some degree doesn't mean they're really doing it all that well. Basically, if you notice that even in spite of trying to move somewhat quickly you have a bunch of spots where you can re-max your mana, then you can tailor your gearing choices accordingly, but if not you can lean back into +healing. You could also keep an int gearset for specific fights and then swap from a more generalist set to that for a specifically long encounter, etc.
