Having worked in kitchens - seasoning a dish "properly" is a dark art - especially white fish. People have many different palattes and tolerances to seasoning levels. Chefs are always taught to slightly over season as some "punch" is lost during the cooking process. With that being said - the one big thing I noticed was the "thyme" sauce that was served on the plate with the snapper was an shitty color of brown - maybe it was the lighting. That unappetizing palette color really doesn't belong on a plate. I wonder if they really have a chef from France working in the kitchen....

You are much younger than me, but these kinds of experiences remind me of a prankster show that was on tv years ago. They had people thinking they were getting great quality, unique food, but it was ordinary things. The two examples that stuck in my mind was #1 the expensive water, that came right from the tap in the kitchen, and #2 was a "French mousse", that was simply cool whip. People were raving over these items, because they thought the price meant "great", but at the end, the pranksters told them the truth. Just shows that people can be swayed by fancy presentations, atmosphere and hype. Glad you are truthful with your reviews.

There's a few different reasons I can think of why they'd present the jam that way. Legally they might have to present it that way either due to having to disclose / show customers it isn't homemade, or is presented that way as part of a partnership with the company (like how Woody's Lunchbox has Babybel cheese). Another simple reason is, because "it's cute". I don't know how many times I've been with people, or overheard other guests at restaurants gush about even condiments (jarred "fancy ketchup") being presented that way and thinking how "cute" they are and making sure to take whatever it was with them. I also want to say I have to commend you for always being nice and polite to your servers, even in times like this where the meal isn't ideal. It's rare.

Monsieur Paul was a place of choice they wanted to eat at, but I had to back out, because I couldn't justify paying that 275$ price tag for a fixed menu. I'm actually happy you're one of the few that mentions how incredible the Flying Fish is. This was the first signature restaurant I ate in when my family and me first visited WDW and the food and the service was ace quality, so I always recommend FF. But back to this, I'm sorry that your experience here was pretty bad. I mean finding two shells in your first few bites is pretty unacceptable for a restaurant that's supposed to be of this grandiose caliber...In a way I'm kind of glad I didn't come here. I should've been braver to suggest FF, but what's done is done. I really love your honest reviews! While I realize it can be very uncomfortable sending a dish back, or being honest with the server about a dish in a restaurant like this, you're doing the place a favor when you do it. It lets the management know their product is substandard and disappointing. If they're charging that price for a meal, it should be great. There are Michelin-starred restaurants in NYC that charge about the same for a prix-fixe meal, and offer much better cuisine. The restaurant manager and chef de cuisine at Monsieur Paul should be ashamed of themselves.
