For a long time, when whe was in middle school, my nearly 17 year old would ask "if you could eat just one thing for the rest of your life, what would it be?" All the answers were interesting, but hers was the best: "I'd eat salad. Because salad is so versatile. It's not always only lettuce, and you can have a balanced meal every time."

Kaleb, our Thanksgiving menu is already planned, and someone's bringing a salad they're proud of. Your wild rice salad will be a feature of our Christmas lunch, though! I always associate lettuce or salad leaves with summertime and warmer days… this looks amazing but still it’s weird in my head, I’m quite sure that here in Belgium we don’t have lettuces these time of year… we do have chicory or endives but I suppose those are too bitter in this… if you’d like to eat it with meat or fish what would you suggest? I know Turkey is traditional at Thanksgiving but I’m not American so I wondered if there are other options that would work 😍
