DESSOUS LE FRANÇAIS

Ingrédients:
(cs est une cuillère à soupe; cc est une cuillère à café)
(1 mesure = 237 mL; 1 cs = 15 mL; 1 cc = 5 mL)
Pour 50 kalkals
3 mesures (420g) de farine de blé (type 45 ou 55)
¼ de mesure (50g) de sucre en poudre
¼ de cc de sel
¼ de cc de levure
⅔ de mesure (158mL) d'huile végétale (colza ou arachide)
1 oeuf gros (ou 3 cs d'huile)
1 mesure d'eau
Pour l'enrobage:
600g de kalkals
½ mesure de sucre
¼ de mesure d'eau
Préparation de la pâte:
1. Mettre la farine dans un récipient, ajouter le sucre, le sel et la levure.
2. Ajouter l'huile.
3. Ajouter l'oeuf (ou les 3 cs d'huile).
4. Ajouter l'eau.
5. Bien mélanger pendant 5 minutes, ou pendant 10 minutes si vous le faites à la main.
6. Rassembler la pâte en forme de disque et laisser reposer 10 minutes.
Modelage et cuisson des kalkals:
1. Couper la pâte en boules de 2.5 cm.
2. Poser la pâte sur un peigne ou une fourchette (voir la vidéo).
3. Aplatir la pâte sur le peigne.
4. L'enrouler pour former les kalkals.
5. Faire frire les kalkals à feu moyen pendant 10 minutes.
6. Transférer les kalkals dans une passoire.
7. Faire fondre le sucre et l'eau.
8. Ajouter les kalkals.
9. Bien mélanger jusqu'à ce que le sucre cristallise.

The song and the shushumow remain me our country Somaliya. Thank you. That's how it was whenever the ladies cooking food they used to listen to this kind of songs and cook, invite friends, laugh, i miss those days. I was young and I used to watch what ever the ladies do at home. I used to love the jokes they tell the laughs how they used to have fun at home with their friends in the kitchen listening songs. Or Quran. And How they dress wen there in the kitchen. Baatiga goor garada laastiigeeda la hoos galinayo. I wish I had what that had. But the dagaal qabiil did not give me that chance. Oo yaa Allah.

It is a Somali traditional dish, specially in the coastal cities of Southern Somalia. Most of the time it is coated with sugar, but they are people who leave out the sugar coating. Thank you very much for your comment.

This reminds me when I was a child with my sisters and brother’s running around playing while my parents were cooking. It makes me miss happier times as a child. I’m a uni student and was looking at making something that reminded me of home. And this recipe came up. Thank you.

Ma shaa ALLAH! These were delicious! The first time I made them, they were wonderful. The second time they were phenomenal! The only thing I changed was, I added a little bit of vanilla to the dough, and some orange blossom water when I melted the sugar. :) These are a wonderful addition to my morning tea/coffee.

When you are rolling them out, make sure you flatten the dough to a thin sheet and curl them up really well. If the dough is thick they will swell and open. Thank you for your feedback.

Oh i'm really luvin' these beautiful Somali Vibes, and the glimpse of that unique mosque to be found in Mogadishu is SENSATIONAL, now as for these yummy kalkals, ymmmm....what an AWESOME treat to have and so ingenious the way you make the "waves" on each "cookie",...these would be very DELICIOUS with a hot, steaming cup of corn porridge, in my country, the porridge is known as atole de puskua,....thumbs up, keep up the positive vibrations, greetings from Querétaro and thankin' ya for this WONDERFUL Share!! =)

Oops, I meant baking powder. I always mix those two up. So I made the recipe today, and it turned out amazing! They're so good with sha. Although the dough did give me problems, since it was really sticky. I used the comb, but I left it in hot water overnight to get rid of the build-up. Thanks for the recipe! :D

You are most welcome. You can make half the recipe and divide everything by two. For example use 1 1/2 cups flour, 2 Tbsp sugar, pinch of salt and baking powder, 1/3 cup oil, half a beaten egg, 1/2 cup water.

The measuring cups will not make a big difference. If you use the same cup measure for the dry and wet ingredients, they should balance out. As for them not being cooked all the way through, make sure the oil is not too hot. Use medium heat, otherwise they will brown too quickly on the outside before the inside gets a chance to cook through. The inside may seem not cooked if you eat them while still warm. Give them a chance to cool down completely. Do let us know if you still have problems.

My French husband had Muslim friends growing up and did fine with them, but now he won't associate with them due to some bad ones at his job. I am American in France and I've always gotten along with them fine and learned a lot -- I find their food and their ways exotic but I like to learn about it and try stuff. We both like "oriental sweets," I like sesame ones and sticky ones and he likes almond ones. These are pretty! I also like "Turkish delight," and enjoyed being in Turkey. The delights is just a generic term -- they have many kinds. The food was weird for me at first but then it grew on me. Uprated.

Traditionally, these were not made to eat all in one sitting. We put them in an airtight jar and have the kalkals with tea for several days. This recipe yields about 50 kalkals. Deciding on a serving size for these is not easy, but we would say probably 10 servings.

Is it a somalee traditional dish?we call it ..Khujoor...they are very popular in my hometown ...a little bit difference.We put sugar in the dough and dont coat in the sugar syrup.I am surprised to see such close resemblance.Your videos are really awesome.

Wa Alaikum Assalam. Assuming that you used the right quantity of baking powder, you will need to really flatten the dough on the comb/fork. Look closely at the video and you will see that we flatten it to a thin sheet, then roll it. If it is thicker, it will puff up in the oil during frying. Thank you for the question.
