⬇️⬇️English recipe follows⬇️⬇️ 花生南乳炆豬手 材料: 急凍豬腳3磅 大花生4兩 處理: 1. 在高速煲內,加入清水半升,放花生煲一煲,煲去汚漬。 2. 水已滾起,倒去水分,擎乾水,清水沖乾淨,擎乾水。 3. 在高速內,加入清水1升,放豬腳煲一煲,加入紹興酒1湯匙及粗鹽1茶匙。水再滾起,出水3分鐘,倒去水分,加入清水浸5分鐘,再倒去水分,逐件豬腳洗乾淨,擎乾水。 4. 用洗潔精洗乾淨高速煲。 5. 放豬腳入高速煲,加入花生,並加入調味料: a. 老抽半湯匙 b. 生抽1湯匙 c. 蠔油1大湯匙 加入清水200毫升,再加入: a. 南乳1磚 b. 已洗淨的冰糖4粒 再加入清水200毫升,攪勻。 烹調: 1. 用“蹄筋”功能,炆40分鐘。 2. 炆了10分鐘,已煲滾,攪勻豬腳,冚蓋,繼續炆。 3. 豬腳已炆了40分鐘。 4. 完成,上碟,可享用。 Braised pork knuckle with peanuts in high speed cooker Ingredients: Frozen pork knuckle 3 lbs Big peanuts 4 taels Preparation: 1. In high speed cooker, add in tap water 0.5L. Put peanuts in pot. Boil it up to remove dirts. 2. Water boils up, pour away water. Drain. Rinse thoroughly. Drain. 3. Add in water 1L in high speed cooker. Boil the pork knuckle, add in Shaoxing wine 1 tbsp and cooking salt 1 tsp. Water boils up again, boil it for 3 minutes. Pour away water. Soak the pork knuckle in tap water for 5 minutes. Pour away water again. Rinse the pork knuckle one by one. Drain. 4. Rinse the cooker thoroughly with detergent. 5. Put pork knuckle in high speed cooker. Add in peanuts and seasoning: a. Dark soya sauce 0.5 tbsp b. Light soya sauce 1 tbsp c. Oyster sauce 1 big tbsp Add in water 200ml, and: a. Preserved bean curd red 1cube b. Rinsed rock sugar 4 cubes Add in water 200ml, mix well. Steps: 1. Use "tendons" function, braise for 40 minutes. 2. Have already braised for 10 minutes, it boils up. Mix the pork well. Cover up the pot. Continue braising. 3. The pork knuckles have been braised for 40 minutes. 4. Complete. Put on plate. Serve.
