材料:(wpy )
中型鸡腿 4只 (清洗干净,在肉的部分划一刀,容易腌制入味和炸熟)
腌料:
辣椒粉 1茶匙
咖喱粉 1茶匙
盐 1茶匙
粘米粉 1汤匙
木薯粉 1汤匙
辣椒干 5条 (剪半)
咖喱叶 1支
香料泥:
大红葱 半粒
姜 1小块 (切片)
蒜 2瓣
黄姜 1小块
香茅 1支 (切小段 )
☞ 除了香茅,全部材料倒入搅拌机,加入少许水,搅拌均匀后,
再加入香茅和少许水,搅拌,香茅无需搅太烂。
1. 鸡腿加入腌料和香料泥,混合均匀,再加入1汤匙粘米粉,混合均匀,
放入冰箱,腌制至少4个小时,隔夜更佳。
2. 从取出鸡腿,放室温20分钟至完全回温,加入1汤匙木薯粉,混合均匀。
3. 起锅烧热适量油,待油温160度,转中小火,放入鸡腿慢炸至定型,
再转中火炸至金黄,熟透(约10分钟),起锅前,加入辣椒干和咖喱叶(增香)。

Ingredients (Diana Aw)
1. Chicken drumsticks x4. Cut a small cut at the centre of the meat with sharp knife.
2. Dried chilli x5pcs
3. Curry leaves x1 stalk
Blended ingredients
1. Red onion xhalf
2. Ginger a small piece
3. Garlic x2 pieces
4. Turmeric a small piece
5. Lemongrass x1 cut smaller
Method
1. Blend 1-4 first then add lemongrass to blend. Do not blend too fine
Marination ingredients
1. Salt 1 tsp
2. Curry powder (meat) 1 tsp
3. Chilli powder 1 tsp
4. Rice flour 1 tbsp
Method
1. In a big container, combine the ingredients 1-3 with the blended ingredients and mix well
2. Then add the rice flour and mix
3. Transfer to air tight container and keep in the fridge for 4 hrs. Best if overnight
Method
1. After marination, take out the chicken from the fridge and leave at room temperature for 20min
2. Coat the chicken with some tapioca flour
3. Heat wok with more oil to 160deg and turn to medium low heat. Add in the chicken and fry. Turn to medium heat once the outer skin has set and fry for 10min for medium size drumstick
4. While halfway frying, add in dried chilli and curry leaves
5. Drain and arrange on plate
6. Serve and enjoy! 💕
