ב''ה, in USA those mushrooms are commonly going to be sold as "enoki," some prefer the flavor without any heat applied to them. The 'fishy line' is the fish's "lateral line" nerve/organ for anyone learning anatomy. Looks delicious; if you're doing this some of the subtle flavors in Asian beers are going to pair better with fish, or maybe throw in a tiny amount of lemongrass if using an American can.
