For example he says that because Minecraft has such a large player base, that’s its likely it would happen to someone. That’s true, but the chance of it happening to one individual is so low that that doesn’t even matter. Although the fact that he uploaded his world download would imply that he didn’t cheat, so I’m not entirely sure what to believe.

It's not just how likely an item is to appear between multiple tries, it's also about the game itself since not every game will be good, and since every speedrun is on a new world, that world might just happen to have a bigger chance of loading items if the numbers happen to fall so. Which would also depend on luck. So it's not clear he cheated, there's a possibility he did so, but, unless you have proof that he didn't actually get lucky for said speedrun, you can't know for sure.

Minecraft, in all its glory, is a glitched game. There are tons and tons of glitches, and some of them happen on a regular basis. He didnt intentionally use a glitch, so he submitted it as glitchless, then when it was analyzed, he came to the conclusion it was glitched. (This is only in the essence that he didnt cheat, if he did cheat its a poor excuse).

It would be cool to try and see a random seed category though. Would boil down to finding the stronghold as fast as possible.
