「附配方」
烫种面团
高筋面粉 22g
细砂糖 6g
热牛奶 42g
主面团
高筋面粉 500g
细砂糖 54g
牛奶 345g
炼乳 40g
耐高糖干酵母 5.2g
盐 8g
无盐黄油 50g
烫种 全部
乔立7600厨师机揉面参考
3档3分钟揉成团加烫种
6档12分钟初级扩展加黄油
3档3分钟加黄油揉匀
6档3分钟完成 烘烤时间
高比克T60s风炉烤箱
不带盖山形吐司170℃20分钟
带盖平顶吐司160℃28分钟
卡士750s平炉烤箱
山形吐司上火165℃下火210℃25分左右
平顶吐司上火175℃下火175℃30分左右
Hot seed dough
High gluten flour 22g
Fine sugar 6g
Hot milk 42g
main dough
High gluten flour 500g
Fine sugar 54g
Milk 345g
Condensed milk 40g
High sugar resistant dry yeast 5.2g
salt 8g
Unsalted butter 50g
Hot seed all
Qiaoli 7600 chef machine kneading dough reference
Knead into a ball and blanch for 3 minutes on setting 3
6 levels 12 minutes primary extension with butter
Add butter and knead evenly for 3 minutes on setting 3
Baking time is completed in 3 minutes at level 6
Gobic T60s wind stove oven
Uncovered Yamagata Toast at 170℃ for 20 minutes
Toast with lid and flat top at 160°C for 28 minutes
Cass 750s open-hearth oven
Yamagata toast is heated at 165℃ and then heated at 210℃ for about 25 minutes.
The flat-top toast is heated at 175℃ and then heated at 175℃ for about 30 minutes.

刚刚跟着做了这款面包(两条吐司),加了一颗大鸡蛋(有减去牛奶),机器揉面。揉面时真的很嫩,漂亮。烤出来,真的非常软,好吃。谢谢你,我一定会继续用这个配方做吐司!❤❤❤

昨晚試做了這個配方的吐司,我用Bosch烤箱,一次做3個帶蓋半條吐司,爐溫200度c,烤約35分鐘。 口感綿密,不錯吃!! 謝謝你分享的配方

Hi I stay in 365 days hot and humid day. The kneaded dough is always more than 26 celcius… then what should I do ? So when should I add in the yeast?

我把煮沸的牛奶倒入面粉后,不是视频中的面团,是面糊状态

你可以試一下,把牛奶跟麵粉倒入小鍋裡先拌均勻,在開小火加熱途中需要一直不斷攪拌,才不會糊底,拌至微濃稠離火再拌一下就可以了。讓你做參考~
