In the uk, we keep ketchup and mustard in the kitchen cupboard and mayonnaise goes in the fridge when it is open.

@@marmite. When I took health and hygiene courses, they stated it should be refrigerated after opening alongside ketchup etc but many don’t. Much like you shouldn’t store baked beans in their tin if only using half a can. Each to their own really, we stored mayonnaise in the fridge at my old work place, I should think it’s to follow certain rules & regs. Each to their own really.

Commercial mayonnaise is made with pasteurized eggs which means it has been treated to prevent salmonella. It does not need to be refrigerated. Didn't you take high school biology?

My dad was an,FDA and USDA food specialist... We never ever refrigerated our mayonnaise... Even today I've never refrigerated it... It's perfectly fine out...
