Hello, thank you for sharing this great recipe! 🙏🏼💓 I just had a few questions. 1. If we don't have pastry flour, can we just use all bread flour? 2. You mentioned that we can use a stand mixer or bread machine if we have one, just don't add any salt until the dough is kneaded. Does the dough have to be completely kneaded into a smooth ball first or can it just be roughly kneaded until all the flour is combined? 3. Which settings would you recommend on the stand mixer to knead the dough? Should we mix it on the lowest setting to combine all the ingredients? Or should we mix it on setting 4 to knead the dough into a smooth ball? How long should we knead it... for 6-8 minutes?

Thank you for your support! 1. If you just use bread flour, it's not easy when you open the dough. 2. You only need to roughly knead the dough to add salt, not too late, otherwise the salt will not be evenly mixed in the dough. Another way is to put other materials except flour on the bottom, put the flour on the top, take some flour and mix it with salt first, and then put it on the top, then it can be stirred together. 3.You use to knead the dough in 2nd gear and knead it in 4th gear for about 6-8 minutes.
