More rice wine the better the taste. Japanese sake is a good substitute for rice wine. 3. add a 1/2 tsp of sugar, and a 1/2 tsp of whiite pepper powder. 4. Add some uncooked chopped green onion when served, to add some Cilantro is a good idea as well.
Yep. Based on seeing what you did, I also agreed it's a three. You're missing the wine and the fermented beanpaste. Also, don't forget they actucally add plain beef broth as the base for the noodle soup. In another word, serve the cooked noodles in the plain beef broth and then ladle the braised beef along with its sauce on top of the noodles then garnish with the vegies.
in case you dont know, there is Taiwan 牛肉麵 in London . I just watched 英國奶奶 video. Amy says it is very good. It is in a place called Bang Bang Oriental Foodhall. you will find 牛肉麵 in there.

Beef noodle should be separated to 4 parts. 1.Noodle: Only cook before you eat. 2.Spiced beef oil (soul of the beef noodle, i reckon): Use ONLY beef oil cook with spicy, ginger, garlic, chili pepper, …etc. in low temperature (like simmer.).It could be stored in a fridge for weeks. 3.Broth: Use beef bone and vegetables, like onions, carrots, celery, white radishes (or turnips.) to make broth. Season with soybean sauce and the flavor you like. 4.Meat: Use beef shank or boneless short rib. Cook with broth in a pressure cooker to make connective tissues tender. Combined 1-4 together and you can have a Taiwan style beef noodle.

If you really want to make it again, i can translate the video for you guys. When you smell the flavor of the spice oil, you will know what’s the difference.
I tried to use Angle hair pasta as a replacement for the Chinese Su-style noodles, and it turns out great. I think maybe you can try it as a replacement for Taiwanese noodles too.

要用台灣電鍋省時,但是香料要炒過,湯要用牛骨煮出骨髓,滷包,牛肉大就要多時間燉,切片就少時間

Some said each family has their own beef noodle soup. So nevet mind the recipe, you can take it as your first try, and develop that to be your family style. You can pan seared the beef in your cast iron for browning color for additional burnt flavor if you like it. Purring soy sauce on the inner wall of your hot cast iron while the beef still inside the pot, then add the broth. This will add a bit of burnt aroma of soy sause to the soup instead of adding soy sauce directly to the broth. The beef you bought looks too lean to me. However, if that is all you can get, try to ask your butcher shop for a small chunk of beef fat and utilize it as cooking oil, leave it in with the stew, discard the fat after the whole thing is done. The aroma of the beef fat plays a major role to the whole dish.
Love this. I think you guys can definitely do a Taiwanese hot pot 火鍋。much easier than beef noodle or bubble tea
