Yaksik (Sweetened Rice with Dried Fruits & Nuts: 약식)

9 жыл бұрын

Full recipe: www.maangchi.com/recipe/yaksik
This recipe is also in my cookbook, Real Korean Cooking: www.maangchi.com/real
Yaksik is a Korean rice cake made with honey, nuts, jujubes, and glutinous rice. It’s a sweet, delicious treat that’s packed full of flavor and healthy ingredients. Even the name is healthy - in Korean, yak means “medicine,” and sik means “food.” Koreans have long believed that honey is a medicine that’s beneficial to your health, so anything with honey is good for you. We feel the same way about jujubes and pine nuts, too, so yaksik is good for you. Luckily, it’s also delicious!

Do I still have to soak the rice if I have a rice cooker?
@Maangchi
@Maangchi Жыл бұрын
You can make this in a pressure cooker not with a normal rice cooker. 1. Put 2 cups of washed and drained rice in a pressure cooker. No need to soak it. 2. Add the caramel sauce, seasoning sauce, honey, jujubes, raisins, pine nuts, chestnuts, and the dried cranberries (if used). 3. Add 1 cup of water and set the pressure cooker to make rice. Check out the description box in any video and follow the link for the written recipe. Every video has a written recipe where I provide more detailed information such as ingredients, step by step directions, stories behind, photos, and tips.

I bought 3 of your books. One for myself, one for my patient ( he had been exposed to korean food during the vietnam war working with korean soldiers. His American wife makes kimchi for him. His father was a Korean war vet too), & a student whose mom is Korean but she lives many states away from mom. Your cook book means so much more for us. Oh my coworker is bringing a copy to Germany next week since her son (who lived in korea for 3 years) lives in Germany now with a korean girlfriend. they make Korean food there all the time too. My coworker was so excited to see how nice the book was. Of course this was my recommendation :) Thanks. keep up the great work!

For anybody wondering what jujube is, it's also known as the red, Korean, Chinese, or Indian date. She uses dried ones here, so other dates may work as well, but it won't be the truly authentic dish.

Even my boyfriend who is kinda super traditional american boy, tried jajangmyeon and yaksik. he loved both. thanks maangchi
