What an amazing day… a special tour of the Yaxell factory, experiencing such a unique style of fishing, and dinner with the owner of Yaxell! So happy for all your success, Ryky!! I liked how at 4:31 the sharpener finished his sharpening by blunting the heel. I do the same on my knives… other than cutting up your dish towels, I've never seen a need for having a screaming sharp heel "corner" (unless you use your knives to open cans, which I've seen 😱). I'm super happy with Yaxell. The greatest knife in my drawer is their Dragon Fusion nakiri. My favorite, BY FAR!!

Thanks for sharing such an awesome video. I fell in love with yaxell knives a few years ago, their price to quality ratio is outstanding (I still can't believe how cheap they are but still beautifully built). I even got a couple of my coworkers using their knives.

The cormorants are fitted with a band around their necks which prevents them from swallowing larger fish. So they give up the fish they catch to their masters and are rewarded with small pieces of fish. Great video, Ryky. Hope to make it out to Seki city on of these days.

congrats on your wedding. And you give better gifts than the ones I got. I got things that were relatively pricey, but completely worthless to me. (I hope they don't read this) At least I sent off two buddies on nice lives and they've got great kids now. That's whats important

@@user-mz6ts4xn6i I've had 2 yaxells for a few years now heavily used on the line and only chiped the petty deboning chickens like a dummy. Microchips. Santoku is a trooper never chipped. Just got a ran+ kiritsuke today. Taking it in tomorrow at work. Time will tell but I'm confident there will be none.

I have a collection of 6 Yaxell Knives, all GOU 101, which I have used in my home kitchen for over 5 years. They are beautiful and amazing, I love them, but tragically I don't think they are stocked by UK stores any longer.

Ryky, what on earth was that sharpening system they were using at the factory starting at the 4:00 mark? Are there smaller systems made for professional sharpeners like yourself? And would a system like that even interest you at all in your own business? Very curious about your thoughts!

Yes, the Enso are made by Yaxell. The HD series is very similar to a Yaxell Zen, and a Enso SG is similar to a Yaxell Gou. Fully professional level knives, but less expensive because it's a "house brand" like Nordstroms or Macy's do. It is less because the reatiler absorbs part of the markup so the customer builds customer loyalty
