I was disappointed when I pulled the box cake from the pantry. I had my heart set on chocolate. But I was not going to let that stop me. A yellow butter cake would be good enough for my desired praline sauce. Praline sauce was the ultimate goal. The ingredients listed on the box were water, butter, and eggs. Instead of using the listed ingredients, I replaced water with buttermilk, used the correct amount of butter, used 4 eggs instead of 3, and added 1/2 cup of ricotta cheese. I whipped that cake and set it in the oven at 350 degrees for about 35 minutes. While the cake was still hot, I poked holes and added the praline sauce. Oh, it turned out to be a delight!
Praline Sauce
1 stick of butter
1 cup packed brown sugar, light or dark
1 cup heavy cream
1 teaspoon vanilla
1 teaspoon salt
toasted pecans and coconut, optional,
Melt the butter, add the brown sugar, and stir until the sugar is dissolved. Add the cream, stirring until blended and smooth. Add the salt and vanilla. Add nuts and coconut. This can be used as a topping for cakes or over ice cream.
