INGREDIENTS I USED:
Baked at 350 degrees for 1 hour 5 minutes. (Time may vary depending on YOUR cake pan and/or oven.)
3 Cups Cake Flour
1/2 Cup Unsalted Butter
1 8oz Package of Neufchatel Cheese Softened
1 1/2 Cups White Sugar
1 1/2 Cups Brown Sugar
4 Eggs Room Temperature
2.5 Cups Roasted Baked Sweet Potatoes (let them cool)
2 Teaspoons Baking Powder
1 Teaspoon Baking Soda
1.5 Teaspoons Cinnamon
2 Teaspoons Nutmeg
1/4 Teaspoon Ginger
1/4 Teaspoon Salt
1 Tablespoon Pure Vanilla Extract
PRALINE SAUCE
1/2 Cup Salted Butter
1 1/4 Cup light brown sugar
1 Cup Chopped Pecans
1/2 Heavy Cream
1/4 Cup Maple Syrup
1/4 Teaspoon Kosher Salt
1/4 C Caramel Chips

When you were tapping the bottom of the pan it reminded me of my mom making cakes. She would lightly tap on the counter. We had to tip toe through the kitchen silently so as not to make the cake fall haha now I think she just didn't want us being noisy. One again thank you for your cooking and memories

OMG, I just made this cake. It’s so good. I had made it before, one with roasted potatoes and one with canned. I gave the roasted one to my neighbors and they raved about it. I didn’t like the one with canned sweet potatoes. I didn’t understand why they loved it so much. So, I made it again with the roasted sweet potatoes. I put a cream cheese frosting on it and a Carmel sauce drizzle on it. It is sooooooo delicious. Fabulous cake. Definitely use roasted sweet potatoes. Thank you for the recipe. Mrs. Donna: I finally got around to baking this cake and it’s so very delicious! My grandson doesn’t like pecans so I left the pecans out of this cake! It was still so very delicious! Going to try it for Thanksgiving!! Secret to cake pans. I warm the pan slightly and spray it with Easy Off oven cleaner and let it sit. Takes the brown stuff on the outside of the pan and makes it look new!!❤
