Fred knows his chicken. I’ve tried all types of dishes when it comes to chicken but Vietnamese know how to boil chicken. Boiled chicken goes well with herbs and a dipping sauce made from salt, pepper, lime and lime leaves. Fred knows what’s up!

Once I was sick with a terrible flu, and my Vietnamese coworker recommended me a Vietnamese soup that consisted of Black chicken cooked with all kinds of Vietnamese herbal medicines. I thought it would not be good because it would taste like medicines, but ... oh, man. It was so delicious. Later, I learned that Vietnamese black chicken is raised at home and is more expensive than regular chicken. Now, I retired and live in the States. Whenever I visit Vietnamese farms in my state, I try to look for some black chicken, but there is none there.

Boiled or steamed is the Vietnamese traditional way to eat chicken. It's very flavorful when dipping with muối ớt chanh or muối tiêu chanh or nước mắm gừng eat it along with rau răm.

During war time, gold was life savor for Vietnamese whenever they needed to evacuate from enemies. That was the urgent currency that people can trade anywhere they went to so they alway set aside partial of their saving to buy gold. And when they had gold, they wanted to keep it close to their side so they mostly buy jewelry to wear, for women, mostly thin bracelet because they are easy to stack together. It is still aplly today though, gold is their rain check and yet, to show they are doing well.

You should try “gà rang muối” (salted fried chicken) next time, there are different styles in Saigon, but the nothern style is the best, the special ingridient is the salt (with cornflake), you can buy this kind of salt online, and try to make one
