However and like you mentioned in your video, it requires a know-how skill to prepare and/or cook the eggs to a desire stage. As with the sauce which calls for Shio Koji, don't you think the enzyme in Shio Koji works best @room temperature? In other words, first to marinade the thin-sliced meat with Shio Koji in a room temperature to let its enzyme do its magic. Next, prepare the sauce sans Shio Koji. Then, cook all the ingredients as shown in the video. I already have a simple DIY sous video cooking vessel. However, if you don't mind, I would like to know more about the sous vide gadget you used in the video and I certainly would appreciate if you can provide link to this sous vide gadget. I think, with a proper cooking vessel, one can really turn this gadget into a low-temperature multi-functions cooking vessel, i.e. incubator/ dehydrator / slow cooker* / sous vide, etc. * If this gadget can heat up to 76°C, then a slow cooking is possible.

1. It is only necessary to tenderize the meat without overbreaking it, so room temperature is suitable. There is no need to marinate the meat with salt koji beforehand. Anyway, I found this 养生壶家用多功能煮茶壶办公室小型玻璃花茶壶电热烧水壶炖煮茶器 (sorry I just copied the whole title mainly because I don't read/write Chinese) @Taobao with a price tag ¥79 (or about US $11) + Free S/H within China (don't know how much to ship to US). I do prepare, boild / steep, and drink many different varieties of herbal tea and this kettle will come handy. I must say it is an excellent gadget to ferment Amazake.
