Another option for Paul, if he’s as articulate in writing as he is speaking, is to contractually grant write for the nonprofit he currently works for. He would need to negotiate it so that he gets paid an hourly rate for the grant writing, which is on top of his current salary, but he could easily double his income, not have to change jobs, and still have time left over to spend time with his family if he organizes his time well. Further, doing that also puts the nonprofit in a better financial position so it can pay him more.

The issue is in general most people make a decent salary, but people Don’t live within their means. The key is to live within your means and you’ll avoid over inflated stress. They always leave out the anxiety part. I don't know anyone who can work full time then another job from 530pm to 1130 pm and still keep their sanity and health. Time is the most valuable asset. He should be finding a side gig or even some sort of quick-learning skill that pays well. Overworking yourself is unhealthy. You could get into a car wreck on the way there or home from all the fatigue....or get hurt at work overdoing it.
