I don’t know about you, but my kids are in this phase right now where they’ve decided they no longer like basic foods like rice, or mashed potatoes. Thankfully they still wolf down salads, grilled chicken, and all kinds of fruits and veggies, but this potato-hating phase is starting to get to me. I’m always left with a mass of mashed potatoes after all the other leftovers are gone, and so I’m forced to get creative! These Cheesy Leftover Mashed Potato Pancakes are the PERFECT way to re-purpose leftover mashed potatoes AND they’re totally kid-friendly. Ingredients:
600 g of potatoes
300 g of carrots
salt
150 g of cooked ham
150 g of cheese
150 grams of Boiled Green Peas
Chili
For breading:
2 eggs
75 g of corn starch
100 g of breadcrumbs
For frying:
Vegetable oil
Potatoes are not all the same, some are more floury and fall apart, while others remain firmer. white potatoes are therefore more suitable for mashing for the preparation of croquettes (new potatoes should not be used for the preparation of croquettes)
The secrets to keeping them from opening
The first concerns the dough, which must be sufficiently dry. In fact, a dough that is too rich in water will tend to expand more during cooking, breaking the surface of the breading. This problem is solved by letting the potatoes cool once they have been mashed, so the potato mixture dries out and becomes firmer, preventing it from deforming too much during cooking.
