Yep. Pre-made pastry for something basic like this is the way to go. If you're making this, you're probably making other things family-size and you don't have time to make pastry, as AB explains.

I once made a whole turkey pan of peach cobbler for one of my neighbors to take to his family reunion. He was supposed to bring me some back. Needless to say I only got to taste the filling before I made the pie. He said that he barely got some for himself

Hey AB, you pretty much make yours the way I make mine. I have never bought pie crust though (but it's all good). Two things though, (1) dock your crust so that it doesn't puff up on you. (2) add your pure vanilla flavoring after you boil/simmer your slurry, because pure vanilla is made with bourbon and you'll cook out the flavor at a rolling boil. And it right before you add it to the crust and put it in the oven. I hope these tips help😊

Looks amazing. You always do such an awesome job. If I could just make an observation. Chef Jean-Pierre always says that the best way to zest a lemon, or any fruit, is to use the tool on the fruit, not the fruit on the tool. that way you don't have to keep flipping your lemon over to see if you're getting into the pith. By using the tool upside down on top of the fruit you can see where you have zested and where the pith is and it's even quicker that way as well. Just a thought. Oh, AB. My brother from another mother! This Southern girl loooves good Southern, simple food. I love that you use every day ingredients, and don’t get bogged down with froo-froo, shee-shee methods. Grandma and Ma used every day ingredients. Save the exotic ingredients and go with what you have on hand. Love it!

This is another excellent recipe. I made it and it was a hit but I am happy that as an experienced cook for many years I knew I should add a slurry of cornstarch to thicken the filling. You added this at the end of the recipe on the web site but left it out of the video. I wonder how many people used only the video to make this great recipe but did not add the slurry? You should go back and add this to the video and not just on the recipe at the web site so they may not end up with a watery end product.

I love this cobbler…I did a scaled down version for Christmas…my husband loves it…merry Christmas to you & your family 🎅🏻🎄🥗I’m adding a footnote to this comment…he couldn’t wait till tomorrow…he’s having seconds…he LOVES it…and I have to say, I still cut way back on the sugar…I put just a little brown sugar and no white sugar at all…the syrup is already sweet…he said it’s perfect

Hey 🆎 You could take a rolling pin to stretch your pie crust or overlap them then roll it out. Gotta consider the thickness too. The more you roll the thinner it will become. You took me back home to Granny’s house with this one. Homemade Vanilla Bean ice cream…my arm used to burn from all of that churning. Good ol days.

Do you think you could cook the peaches on a smoker with some peach wood pellets. Or maybe the final cook on the second shelf of the smoker? Or would that be unwise? Is that too much sugar for the smoker? Keep up the great work!! Love the recipes!!

I marinate fresh peaches in a cup of peach schnapps, then use the liquid in the batter. Same for my peach shortcake.

I did try this, taste was amazing but it wasn't thick at all, very runny, and the pilsbury pie crust thing, im not a fan, but the taste of the ingredients was great. I'll do it again without the pie crusts. Much Love!

Next time add more cornstarch/ water. I usually use about 5 tbsp each (cornstarch and water) when making mine in the past.
