The moist cake with custard is very airy and fruity. It is a very quick and easy recipe with apricots or peaches that tastes very good. This recipe for a quick cake is simple and delicious.
Ingredients / Recipe: (1 cup = 250 ml)
For the pudding cream:
Separate 1 egg
1 yolk
We'll save the egg whites for later.
Some milk totaling 350 ml. (1 1/2 cups)
Pour the rest into a pot.
2 heaped tablespoons corn starch
1 teaspoon vanilla extract
50 g sugar (1/4 cup)
Bring to the boil.
Add the yolk-milk mixture.
Let it cook gently until it thickens.
Cover with foil to prevent a skin from forming.
Then let it cool down (possibly 30 minutes in the freezer)
Apricots or peaches / nectarines
You can also use fresh fruit.
If you also use canned fruit, drain it well.
For the dough:
3 eggs
The egg white from before.
A pinch of salt
130 g sugar (2/3 cup)
140 ml oil (3/4 cup)
350 g flour (2 1/2 cups)
2 heaped teaspoons of baking powder
140 ml milk (2/3 cup)
Baking pan: 24 cm (9.5 inches)
Assemble the apricot cake as shown in the video.
Bake the cake at 170 °C (338 °F) for about 55 minutes.
