Secret to Making the Crispiest Garlic Popcorn Chicken 蒜香酥鸡
Chinese Crispy Fried Chicken Recipe
Serves 3 - 4 pax

Marinated chicken: Marinate for at least 30 mins.
800g boneless chicken leg, cut into bite-sized pieces
3 tbsps light soy sauce
1.5 tsps salt
1 bulb garlic, grated
A few dashes of white pepper
2 tbsps plain flour
1 tsp baking soda
3 tbsps water
Coat the chicken well with ONE of the following flours:
Use ONE: Sweet Potato / Corn / Cassava / Tapioca Flour
Other ingredient:
1 bulb garlic, leave the skin on and rinsed

Looks very good. I usually follow Made With Lau for cooking Chinese style and i got to say you and he are very agreeable. Thank you for showing the extra step of placing garlic cloves into the oil to season it. I would love a lesson like this on making orange chicken.

The thai version of small garlic is good but their snob-rubbish attitude is, don't sell and don't export whatever customers want. Deliberately pollute whatever people want and paid for. Even when small garlic are seen, best to avoid thai-produce that are new-imports(items not regularly seen within the past 20 years). But their pepper based flour for fried chicken is can buy and use.
