Just move to Italy and date some natives. If your more about the garlic then the olive oil, hunan China also works. (My wife is from hunan and when she ask me, to cut a little bit garlic she means 6-10 gloves.

I made this today, it was absolutely delicious. The sauce and meatballs is going to be a staple recipe for my family, everyone loved it. I did make a few happy accidents that I'll be repeating so I get the exact same results each time. Since all measurements aren't metric I did have to guess on a few. I used one can of 28oz San Marzano whole peeled tomatoes (I want more sauce next time so I will be using 2 cans and doubling the ingredients). I accidentally put 3 tbs of milk in the parmesan cheese for the meatballs when I should have put it in the panko breadcrumbs. I kept the cheese in the milk and also put the 3 tbs in my breadcrumbs too and kept it moving, turned out great anyway. Lastly, I didn't know the conversion for the ricotta so I ended up putting 3 nice-sized tbs of regular store bought ricotta and just eye-balled it to be sure it wasn't too much for the meat. I also used 2 lbs of grass-fed 90% lean beef (it's the best quality I could find at my grocer). My oven is low power so I ended up doubling the cooktime to 40min at 355 F for the meatballs until the juices ran clear and the balls were mostly cooked. GAME CHANGER: I took my mostly cooked balls out of the oven and BROWNED them in a sauce pan to get a nice color and bring out the flavors even more. I took those browned balls, the juices created, and added those to the sauce. Let them simmer in the sauce for 5-7 minutes partially covered and my my my soooo freaking delicious. Not drastic changes, but these small tweaks/accidents led to THEE most amazing sauce, meatballs and overall dish. I'm making it again this week, thank you so much Marion! I came across your channel literally 2 days ago and I'm soooo glad I did.

Hey Marion, huge fan! Thai is my favorite cuisine but I love your fusion dishes! I grew up in an Italian-American family and your base (pre Asian spices) is spot on. One thing I adapted from Indian cooking is frying tomato paste as the first step. I heat the olive oil to a non-smoking, but hot temp and fry the tomato paste (while constantly moving in the oil) until it’s a dark brick red color. It adds an additional level of umami and color! Once it’s reached the dark brick red I add the garlic and the the whole tomatos etc per your method. I even sometimes throw a little fish sauce into my red sauce. Give the frying the tomato paste a try sometime, would love to know what you think! Can’t wait to try a hybrid of mine and finishing it off with your complete recipe! Thanks for this!

This is so good! It has so much Umani! Love the soy and miso sauce. I didn’t have fennel seeds so I used Italian seasoning herbs for the meatballs and it tastes as good. It’s now my go to spaghetti and meatballs recipe. Thank you Marion!

OMG - I didn't think I could improve on MY sauce but yes, must say, your sauce Marion....made in heaven!!! The anise, the chilli and bay leaf definitely gave it a unique flavour which we all loved. Ground beef(drain the fats first), hotdog, garlic ,minced onion, green pepper, garlic powder, onion powder, black pepper, grinded cheese, sugar and salt, the type of tomato you wanna use is on you, I usually end up using the Filipino version anyway. I promise you this ingredient is delicious.

Really into this dish! Marion knows her stuff. The added "strange" anise and miso not typically Italian add so much. Almost done making it. Whole kitchen smells like heaven. The meatballs browned so nice in the oven. The sauce is simmering slow and juicily. Putting it all together soon. Can't wait to taste the final product. Inviting friends to come over. Miso Carbonara, will have to check that out, sometimes I go to the effort of making carbonara only to be disappointed with its averageness, Miso could be the remedy but would want to get the proportions right so as to avoid it being a dominant flavour.

Just made this tonight and everything was great flavors and textures, served with garlic toast and a salad. The only thing I didn’t prefer was lemon zest in the meatballs. Loved it. Had to substitute a few items and added a few for the sauce[carrots,mushrooms] and meatballs but it came out juicy and lovely. Meatballs had gravvy due to my substitute😂. Did not have ricotta cheese used greek yoghurt and ritz crackers in the absence of panko crumbs. Added spring onions too.😊

This recipe is a family favourite now! Only issue I have is with the tomatoes, they don’t break down so I have to mush them quite a bit and you have to consistently watch them. Other than that, an amazing recipe 😊

I tried the miso in my tomato sauce and it made such a difference! Thanks for that tip. I also grate onion into my panko (instead of using milk) and I find it gives the meatballs a bit more flavour and still moistens the panko.

The "firmer" ricotta is called ricotta insalatta as opposed to the ricotta fresca you find in your typical grocery store that is much wetter

Tomatoes contain alcohol soluble flavonoids. The addition of even a small amount of alcohol will bring more flavors out in your sauce than you can get any other way.

@@josephchamberlain3681 I beg to differ... flavonoids ARE ANTIOXIDANTS that contribute the color/anthocyanin and mouthfeel fuzziness/ tannins common in all phenolic content of all plants... NOT ALCOHOL in wines etc. You do not need to add or waste red wine to amp the taste in Umami-rich tomatoes. Even if you do add it, the taste is already entirely different and outshined by the tomatoes and the alcohol would be mostly cook out in the final dish without any discerning difference...adding a little splash of balsamic vinegar or apple cider vinegar is enough. SO save the wine for other better occasions such as a glass of wine accompaniment with ur meal is enough... Unless you are cooking coq au vin :)

I think when when mixing breadcrumb and milk, IMO it makes a nicer meatball if you start w/a certain amt of milk, and sprinkle panko into the bowl of milk just until the point where there’s no more runny milk. If you add milk to a bunch of breadcrumb, panko is so dry that it really won’t absorb the milk evenly. That may not matter in the end product, but I find that if you start with too much Panko and try to mix the milk into it, it doesn’t mix well, and then when you make the meatballs they taste like Panko. Not a bad thing, but that’s not really what we’re going for here - The breadcrumbs are there mostly so that the meatballs don’t collapse during cooking. Also - abt the ricotta - if your ricotta is runny, why not just put a cheese cloth onto a strainer, and then put the ricotta in it, and let it drain some of the whey. And then you can wring any additional liquid out of the cheesecloth.
