On this short video we're talking about all things bread today!
Bread has taken a beating over the past few years. It’s said to make you gain weight, cause bloating and spike your blood glucose. But it all depends on the type of bread you eat on a regular basis.
Join me here, where I discuss the worst types of bread that I would suggest you try to avoid, along with some alternatives to consider when you're in the supermarket or even when you want to try making something at home.

I love bread (good bread) but since I stopped eating it my health has improved exponentially. No sugar spikes, I feel fitter, stronger and sharper (no more 'brain fog'). I sleep like a log and never feel hungry.

being a person of asian ethnicity, makes me glad that in the asian diet, the main carb is rice. i do not get any detectable negative digestion and/or auto-immune issues from rice. i've concluded that when i eat white bread, it's due to the gluten, which appears to be a problem for a lot of people and the negative symptoms appear to get worse with age. i do like bread, but as much as possible, will only eat rye sourdough which means that most of the gluten has been broken down due to the fermentation process. artisan, rustic breads are my favourite in terms of taste and a must with italian deli fillings. but since rice is asian people's carb staple, i'm thankful. dairy doesn't seem to agree with me either, which again, is more of a western thing than asian.

@@lowkeyconvert8971 I love rice but I've had to give it up since its carbohydrate content is double that of most bread. What part of Asia (a massive continent) do you hail from? In Europe, people from the Indian sub-continent are (curiously) called 'Asians'. In the USA people from the far-east are routinely called 'Asians'. People from Jordan, Yemen, Azerbaijan, Nepal, Kyrgyzstan, Borneo, Israel, (most of) Russia, (most of )Turkey, Cyprus, Iran, Mongolia and a good number of other countries in that continent are also 'Asians'. I doubt that many of those Asians have rice as their main carb.

@@alangeorgebarstow hehe, i live in a western country but my ethnicity would be classed as far east asian. i get your point that geographers lump the middle-east and india in with asia as well. Those cultures eat a mix of rice and bread and i think east asia differs in that they have only more recently been exposed to western cultures and therefore eating more western foods including bread. the only exceptions as far as "oriental" asians are concerned might be mongolians and siberians which have/had strong russian influence so their diets are heavily dairy, meat and bread-based. I wonder whether siberians even eat rice.

@@lowkeyconvert8971 Thanks for that explanation; I appreciate it. I love food from all over the world but I've had to reduce my carb (and sugar) intake for health/weight reasons. I miss a lot of delicious food but I'm happy to do so since I am now fitter and healthier than I've been in decades.

Same for me. Gave up all added sugar, bread and rice. My health is back, no crashes and also like you, normal hunger levels and great sleep. Best health decision I’ve made.

I have made my own bread for the last forty plus years, the ingredients are organic flour from a local mill, salt yeast and water - excellent!

@@fredbassett8509 No, it isn't. It's all about how much you eat. If you had a small piece of bread a day, that's harmless, just the same as a small amount of fructose or glucose is harmless. Life should not exist of just water, vegetables and nuts! For years we have been told that salt is a 'big problem'. But that isn't, either. LOW salt consumption can cause high blood pressure (the now well-known J shaped curve). It's all about balance. One small biscuit a day is not going to kill you.

@@Monika-kc8vv 250 ml of warmed water or milk. 50 ml of olive oil. 175 g of white bread flour 175 g of wholemeal flour 100 g of finely chopped mixed organic nuts.* 7 g of yeast. 1 teaspoon of salt. All put into a bread machine. *To get your nuts chopped finely without it going to mush, add it to the water and mix for a few seconds in a small juicer. This chops them up very finely in the water/milk.

My mum used to make amazing bread when we were kids. I loved coming home from school and smelling the freshly baked loaves. I have tried a few different recipes and the bread has been nice but not as nice as Mum's. Ah.... the memories :)

I got very serious about bread 20 years ago. I bought a mill and now buy several varieties of wheat. I mill what I need for my loaves as I make them. No flour sits waiting for the next bake time. And I believe this bread is incredibly healthy and tastes delicious! I now have two mills…an electric and a manual mill. Nothing weird added to my breads and people are always thrilled when I show up with a loaf to share with dinner!

I went on keto diet n eliminated all carbs. Lost the weight n felt healthy. Then after 2 yrs gently introduced carbs again n suffered with bloatiness and sever constipation. Went back on keto n living a healthy life again. 💃

Same. I realised carbs making me very tired and bloated. Stopped all the carbs and I’m back to being strong and healthy.

Keto bread made without wheat can be delicious but you have to make your own. Fine almond flour can be magic done well. For recipes check out “heavenly fan” KZbin channel for her keto bread.

Keto, intermittant fasting, or just keeping carbs, sugars and starches low will help. Always test your blood sugar levels as well to make sure you're diet is working.

I go to the Polish Shop and buy their sour dough. They have several brands. The most expensive comes in a plain clear plastic bag with a cheap sticker telling you the ingredients. This bread has absolutely nothing added beyond what is required to make sourdough.

My favourite bread is my homemade 100% rye sourdough made from a traditional Finnish recipe. My second favourite is my 100%wholewheat sourdough, also made from scratch. No bakers yeast. Just naturally fermented flour, water, salt. Mmmmmm ! ❤

I've been doing this for decades and kinda do it by how it looks, smells, tastes, feels at each stage - it would be very hard to write that down with no pictures, and it all depends really on your local conditions (temperature, humidity etc). I'll try to find some links to videos which might point you in the right direction. 😊

The only supermarket bread I buy and eat: Sainsbury's Sourdough Pave bread: Fortified wheat flour, water, rye flour, salt, wholemeal wheat flour, malted wheat flour, wheat gluten. Jason's Sourdough (various offerings with minimal ingredients), my favourite being Grains & Seeds Ciabattin: Wheat flour, water, mixed seeds (golden linseeds, sunflower seeds) sprouted spelt, salt, fermented wheat flour. No sugar added no oils. I'm not saying these are really good for you, but I'm saying they're the best of what you can find in UK supermarkets at the moment. It's so important to just check what you put in your body these days.

Yeah if the bread has 4 or 5 ingredients, namely water, yeast, flour, salt and maybe some seeds, definitely not seed oils, which seem to be in absolutely everything these days! People think ive become posh because Ive started buying fresh sourdough and ciabatta from my local deli, which lists the ingredients on the brown bag it comes in, and there are only 5.

Bread is bread full stop regardless of ingredients. Loaded with carbohydrates equals loaded with sugar. Just don't eat it.

Thanks for making this video, I gained so much weight and swelling legs, and my Tummy bloated ........my son dietitian fights with me. The store bread is fine she has no problem with it, but her husband makes bread at home .... Now I have someone agreed with me ❤❤❤❤❤❤❤.

I watched Dr Mandell on this subject, if you freeze the bread it changes something in it and doesn't give the spike like fresh bread, if I eat bread that hasn't been frozen I get bloated

Freezing bread changes the structure to resilient starches, which is harder to digest. Similar to whole meal. Less bloating,as long as you don’t eat too much.

During lockdown I couldn’t get bread so instead of having bread I turned to yogurts for lunch and cereal for breakfast. I never got ill. After lockdown I went back to adding bread to my died. Last year I felt absolutely awful. From March this year I radically reduced bread products and I feel so much better.

I like bread so i bake at home and add many other seeds , chia, flax, etc and spices like cardamom, cinnamon, ginger etc..and my bread must hv acv added. And i take coffee and tea

You are mostly correct in all you are presenting here... But.if you can inquire with the bakers and find out where they are getting their doughs from you can determine how healthy their Breads are.

I grew up on a farm in the 70’s. We mostly made our own bread because the closest store was 40 miles away. All of us 8 kids eat bread at every meal. The bread was limited ingredients and store bought bread was like a donut to us. We were all thin and fit however I think it had more to do with working physically hard every day then with what we eat. 😊

It was definitely a function of what you ate. That's how you had the energy to work everyday. It's a loop. If one eats well, one has energy to do the work and the other things that one needs to do. And that's why everyone is fat and lazy and doesn't do anything anymore. Because they're eating processed food all day

@@mooncat.787 Some people are their own worst enemies. They actually think they must give up all foods they like. For example, if you like butter on your toast, have it! But not lashings! A smidgen ( love that word) will have the same effect. Food is so psychological.

Keep it all at a bare minimum, whether it's supermarket or artisan bread. Trust me, I grew up on home-baked sourdough bread my mom and grandma made in an outside brick oven. I was chubby and bellied all my childhood. I only fixed it in adulthood when I drastically reduced its consumption.

99% of kids you grow up with ate bread, all of them weren't fat. Bread wasn't the reason you were over weight, you ate more calories than you used.

@@11235Aodh sorry but you are totally wrong and misinformed. Fat does not put on fat, only carbohydrates can put on fat because of the higher insulin response. If you want to lose weight, you eat, fat and protein, and you avoid carbohydrates. Do you wanna put on weight, you eat carbohydrates. This is not debatable.

I bake bread and it’s super easy and you only need 1 teaspoon of salt for a loaf unlike the store ones that has so much salt and sugar in it.

All modern day wheat products should be avoided. High in carbohydrates that give you insulin resistance.

Avoid carbs when you do not deplete your glycogen stores through rigorous exercise but instead like a more sedentary life Carbs should only be a small treat, not the main staple

The trouble is all the little baker’s shops have disappeared because the supermarkets sold bread that was cheaper. Now bread is awful. The only alternative is bake your own. But, who has the time to do that? People have lives that are too busy.

You and most folks. Most supermarket bread isn't really radically different from what was sold in the 1960s yet people's health seems to have worsened. It suggests to me that bread won't be the main reason.

I eat only Sourdough with Red Fife Wheat or Refined Spelt, or Ezekiel. I don't eat it every day. When I do, i have some protein with it. Without bread, I lack energy. I've tried all the main diets, for months into years, and value them, but without bread i just dont have staying power. I also drink a sip of pickle juice just before i chow down 😊

In the 70's while I was studying medicine... As a student I ate a lot of bread with my fellow students. They would all come over for coffee or tea and toast...And times that's all what on the table was toast.😅. But there was little bit of research done then, that in one year with amount of anticoagulants, flavour enhances, anti-caking agents, colourants, preservatives..etc It all would fill a train a mile long...for me that was a shocker, after that I started making my own or eating less of it...😢😊😅😂.

I gave up buying bread, cakes and biscuits about a year ago as I was suffering from bloating and felt uncomfortable. I now eat home-made lentil bread and chickpea flour tortillas. Lost all the bloating in a very short time. And I had been eating wholemeal bread.

The benefits of fermentation is said to be the good bacterias that result. But in the case of bread, you get the sour taste but the bacterias are all killed in during baking, no matter what temperature, unless you just wait for the dow to dry at room temperature.

You are right to say that baking means you don't inherit microorganisms from the fermented dough but that's not entirely a bad thing because it means monitoring and concerns around food-poisoning are minimal in this widely consumed foodstuff even though ingredients may have been sourced from abroad, kneaded by hand etc. However products of fermentation (prebiotics) remain in the cooked bread and there is evidence that these are beneficial in terms of human digestion and gut maintenance and also that these substances favour the growth of gut organisms that support us, as oppose to those that cause problems. Gut microbiology is a science in its infancy but if you want to delve, you could google Zoe, based at King's College UK, which is a group that tries to disseminate their research on probiotics and prebiotics in lay terms and will also signpost evidence-based research carried out by other leading groups who are also trying to inform the public.

I’ve gone carnivore,lucky to be able to buy pasture raise pasture finished meat locally, I feel better ,my digestive issues have gone and have lost 3 stone, I know it’s not for everyone but it suits me as I was the worst cook in the world.

The best sourdough bread I've found in a supermarket is Jason's Sourdough. Minimal ingredients and no oil. They're sold in Tesco, Sainsbury's and even Ocado I think.

PLEASE do a video on the gluten in bread. A Baker told me, years ago, that a representative for selling flour told him that he should add more gluten to his flour, and the flour would make six times more bread and rolls. He then said his rolls did not taste as good and his customers complained, plus the rolls had more 'air holes' in them - so he went back to using more wholesome flour. So these days the bread made by bakers and supermarkets have extra gluten which is really bad for the body and joints. PLUS the combination of gluten and sugar is extremely bad for the joints and body. Home made bread with good flour is better.

Our family solution with 4 kids at home was to buy a breadmaker…a compromise BUT it gives total control over the ingredients and you can, use the finest flours available in England….we use Shipton Mill flour….organically grown and traditionally milled for the most part and delivered to your door in a 25 kilo bag. The only other ingredients are yeast, salt and water…and in our case a teaspoon of sugar to activate the yeast. That’s it. That’s real bread as defined by law in countries where they do things like that. I know what you’re thinking….people sometimes ask, having tasted the bread….”how LONG does it take to make it?” ……three to four minutes is my honest reply…..

There's absolutely no need whatever of adding sugar!!! The yeast will feed off the flour - it releases enzymes that convert the flour starch into sugar, which the cells absorb and metabolise. Water - flour - yeast - salt...that's ALL you need (been making my own every four days for years). You can add ground nuts, flaxseed, etc. if you want...but NEVER sugar!!!

@@barryfoster453 Oh, please. A teaspoon of sugar in your bread dough is NOT going to cause you any harm. It will be eaten by the yeast and turned into carbon dioxide before the bread is baked. Try thinking a little before giving in to the scare tactics your favorite food "experts" use to keep you coming back to their channels.

Homemade Irish soda bread is super quick and easy to make, tastes delicious,you can create fresh buttermilk by simply adding lemon juice or vinegar to milk,and leaving it for 5 mins 😉

I dont eat bread but family do so brought bread maker and make my own bread for family its easy you put ingredients in the machine a 5hrs later bread comes out ingredients i use is yeast, wholemeal flour,butter, salt and water wallah bread with no rubbish in it better and healthier than any shop brought bread

I buy 100% organic wheat berries and mill my own flour, make my own bread, rolls, buns, and pasta. and if THAT is bad for you then I couldn't careless because I love good fresh bread. and my fresh milled fresh made 100% organic non gmo bread is NOT a brick either, its nice and soft with a crispy crust. There is also nothing wrong with adding a little Sunflower Lecithin which is actually good for you I use the best wheat berries, baja gold salt, the best olive oil, filtered water, yeast and top with a few seeds

Ummm I also love Nan bread, Chapati's and Poppadoms... Or I just knock together some flour, water yeast and salt... Knead it a little while. Let it rest for awhile roll it out knock it flat, cut and roll into handfuls of balls roll it flat and either cook them in some oil for afew 6minutes or bake them for at 210C for 10-15mins. And Viola 😊😅😂

I love bread, but I don't eat a lot of it. The bread my husband and I like is a sprouted, sourdough spelt that I order online. It doesn't make great sandwiches, but is wonderful toast. It is a 4 ingredient bread only because of sourdough and spelt.

I started making simple sourdough bread (I highly recommend watching Ben Starr here on youtube to learn the science behind it, and his recipes work really well.)😮 I wouldn’t eat any other bread now. So easy, so tasty and fills you up so I just eat less now, I just feel a lot better generally.

In the 70s and 80s there were Butchers, Fishmongersand Bakers all over the place that gave you more choice . Since the supermarkets have now taken over, where do you buy those designer loans from? Another bread you didnt mention is keto bread, does it taste good ?

I started making sourdough during lockdown. Haven’t had to buy bread for four years now. Finnish style Rye bread is my favourite to make and is the simplest for those starting out. The supermarket sourdough breads I have seen are not true sourdough.

Surely Basmati rice cooked at home vs a Supermarket Loaf ( which as mentioned is full of STUFF ) is more preferable? I opt for the rice all the time, but I consider it as a dessert, ( why - because it is basically sugar ) so it is eaten at the end of the meal and not at the start. Like the Glucose Goddess says-(about carbs)-eat them at the end and never naked.

The Maillard reaction is a browning process, even we go through the Maillard reaction, which is why a child has clear fat, but an old person has darkened fat, every time you brown your sausage, bacon or steak they undergo the Maillard reaction.

Bread goes mouldy green very quick and just before that a strange smell is given off, I have complained about the smell and the bakery said it was part of the process.

Do you have any details please… Back to bread… we have been purchasing our sourdough from our very small local bakery …it’s amazing and just like you mention the minimum of ingredients, the loaves are made with love and lots of hand made kneading. The best bread I have found closest to making your own… It is shocking what is added to supermarket bread. I checked a lot of bread out of curiosity with an app. Some of the added ingredients are actually listed as hazardous (red) sadly a lot of consumers have no idea what exactly they are eating. Thank you again for sharing your knowledge. I also love your cook books… please keep writing!!

You have to be concerned about molding bread. Bread doesn't last long, meaning you have to eat all of it wthin a few days. There is also unseen mold in wheat bread that you cannot see. While many people have a stronger immune systems than others, you can really get get sick from eating seen and unseen mold from bread. Picking off seen mold on bread can possibly mean it has unseen mold too. Preservatives are included in grocery store breads to make it last longer on the shelves.

If you're that worried, you can refrigerate your bread. And "unseen mold" is everywhere, we live in a soup of microorganisms, and our immune systems evolved to handle it. Yes, don't eat moldy bread. But with care it will still last quite a while without getting moldy. Adding fat to your bread dough (oil, butter, whatever) will make your bread more shelf stable, too.

I have just started using it last week as I have IBS. It has made a massive difference, but it does have calcium carbonate, which is another chemical. Calcium carbonate basically gives a longer shelf life to bread.

You missed on sprouted grains , just one word at the end . Sprouted grains bread feels healthier easier to digest. In USA & Canada we get GMO & Glyfosate grains and I buy most of my bread from Europe Germany, I think there is no Glyfosate or GMO in European bread & German bread taste & digest well ....

Bread / pasta / wheat / flour - anything glutinous from wheat grains should be enjoyed, as a treat. They shouldn’t really be part of a staple diet… once in a while, but honestly, they’re so inflammatory it’s not worth it.

Make my own bread with extra virgin olive oil & organic flour. It's delightful. Couple of slices a day, carbs or not, will do me no harm. Worst thing about bought bread & 70% of everything in super markets is refined seed oils. They're dreadful. Though at least waitrose ciabata is made with virgin olive oil

@@lizroberts1569 It sounds as though you are already careful about the oils you use Liz but just for clarity, two of the most important differences between oils (in addition to the level of processing and how long they've been stored) are the percentage of omega-3 fat they contain and, if it's to be used for cooking, the temperature at which you are going to heat it. 1) The balance between omega-3 fats and omega-6 fats is known to be important for long-term health. Both are essential but most people have a large imbalance and take in hugely more omega-6 so its helpful to go for oils that will help to redress the relative lack of omega-3. 2) The energy of heating produces trans fats which research has shown to be problematic, and the temperature at which this happens varies between different oils. You'll find online tables which will compare the composition of different oils and fats (extra virgin olive oil being impressive here!) and other tables which list the temperatures for each oil at which substantial changes in composition occur (which is before the temperature at which each starts to smoke). You don't always need to choose the oil to suit the cooking method - you can do choose the cooking method to suit the oil/fat, so if you want to cook with butter (which has a low smoking point) rather than an oil (which are usually higher) just cook at a lower temp for longer than you would do with an oil.

I found you can't seem to find anything these days without soy of some description in it. I bought vitamin D3 capsules and they were made with soy. Sausages had soy in them, they were supposed to be all beef. I can't believe where I'm finding that (god forbidden) rubbish.

Hi doc, can you reccommend something to put on weight. No matter what I eat, I also do several test at the hospital. They found a bit of inflamed stomach and tiny cysts in pancreas . Previously they found a 5 cm. Fibroid. Am in my mid 60s.
