They don't need your consent to install anything to the company car as it is their property, they do have to notify all users of these recording devices. Certain documents need to be signed to protect both parties.

Restraint of trade is bs, if you have a good lawyer they'll tell you that it doesn't apply if 1: you where not involved in any specialised roles or leadership roles where you'd know things that could disadvantage the company should you take your knowledge or skills elsewhere
