Thank for the technique. I'll use it next time. I do have to share with you that I do loke my whites crispy as well. I make mine swimming in very hot olive oil spooning the oil on the yolk. But again, I'll give this a try tomorrow. Thanks again.

My mom’s friend cooked her a coddled egg (cooked in a small amount of water) when mom was on hospice. She had refused to eat anything for about three days before this. It was the last thing mom ate. She passed about a week later.

There is always putting a lid on the pan, or basting the egg with the butter you fry the egg in!

You can run water on the inside of the lid give it a light shake then place the lid on the pan this quickens the steaming process ,

My grandmother would splash the fried eggs with the bacon grease in the pan, then put a plate on top like these folks advised, but the splashing crispier up the top white area

Yolk only? -Better stick with a Teflon pan. It'll strip all the seasoning from an iron skillet, and you'll have to re-season, from scratch. I learned that the hard way.

Sunny side up and soft whites all around. Somebody serves me an egg with crispy brown edges it's going back. It ain't that hard. Just enough heat to make 'em bubble, (in butter!), then pull 'em off the heat.

Or you could just cook the eggs on a proper temp in butter and learn how to flip them at the right time. Cooking fried eggs over easy is not this hard. If I get a crispy white or even a partially cooked yolk, it's going in the can. Why is this always made so difficult? Lube the pan with butter, right temp, flip. Perfect egg. Good grief!

The way to well cooked fried eggs to break the yolk as soon as it hits the pan. I learned this years ago when news media warned of undercooked egg yolks could be contaminated with salmonella. That's still true today and I have breaking the egg yolks ever since. It cooks the entire egg evenly.
