i love this show because i work in the field, and here the fails just get called out immediately. Unfortunately, in i guess most places, the standards aren't as high. So i keep telling my staff to use the paper towels to clean their hands, not the cotton towels we use to dry off dishes. When i yell at them from not washing hands before preparing a salad, they look at me like retards. Boss doesn't have my back, because it doesn't directly impact his personal "work". I've seen co workers sneeze into their hands, and then just proceeding to prep salads. I then yell at them in disgust, and they tell me to chill and not always be so negative. And I'm like wtf ? But no one above my position will care. They just want things to run and not deal with issues. In the end it's me getting repremended for causing a disruption, when i just try to raise the standards to an acceptable lvl. And i work a the countries biggest Pizza delivery business. I wonder how it's like in single owned businesses that don't have regulation at all... It's kind of haunting, and i have a hard time going out for food because i know how sloppy most places are, and are hiring just the cheapest staff and chefs.

Amen!!! I've worked in a restaurant for years, and have called out cooks for dropping utensils on floor, then picking them up and using them again. I've called out cooks for not washing salads (people have sent back food because they've found spiders in their salads), and servers for wiping sweat off their face then using the same towel to pick up plates. Once a bowl shattered in a box with other clean bowls, and the cook just picked up the largest pieces, then continued to just blow out the rest of it and continue using them. So now there's broken glass, and spit from blowing on them, and he kept using them. I've seen servers pick food out of the trash can and serve it to guests. (Lemons, butter, strawberries.) This all happened in extremely popular chain restaraunts. I only stopped calling out these things when my manager took me aside and told me that calling these things out causes a disturbance, and that I need to "Lower my standards for the staff we currently have." Instead of telling the other people to shape up, I was told to lower my standards.

Same, I see the dishwashers go from the dirty plate end of the room to the clean end and organise the clean cutlery without washing their hands from touching dirty plates and cutlery. Basic hygiene should be common sense but I see so many people ignore it.

I've checked a lot of links online and I can't find any studies past 2000 that state they are endangered. As far as 2018 goes they aren't endangered according to the few links I found and one says they are currently above their population (I guess that means there are a lot more than usual).

I think Steve's technique on placing the scallops one by one is good, though. Because from my observation, if the scallops were dumped onto the tray at once, the excess oil will be dumped along the tray as well, as the scallops will be covered in oil and contain a lot of fat. And of course, that's bad standards to customer service as well.

They are cooked in a non stick pan on purpose to keep them from sticking to the pan. You only need a little bit of butter and oil (one flavors the other keeps the butter from burning and helps promote browning/sear). If you dump the scallops out a pan and oil follows you've already fucked up. Not to mention above that is Gordon has worked in a professional kitchen most of his adult life. Are you telling me you know more than he does, enough so that you can give proper instruction?
