I made this cake for my sons birthday and it was moist, fluffy and tasty. I shared it with a few people and they asked me if it was a professional cake. I did not have 2 8 inch tins , so used 3 6 inch tins and it came out perfect! I used the same vanilla buttercream icing in the recipe. Thank you @cakesbyMK! Looking forward to trying the pistachio cake next!

Thank you for this beautiful recipe, MK! I made the cake the other day, but instead of using 8-inch pans the recipe calls for, I used 4-inch pans to make smaller cakes. For some reason, the cake was dry despite strictly following the recipe. Is there anything that you suggest to make the cake more hydrated, e.g., perhaps I should cook it at a lower temperature for the smaller sized pans? Thank you in advance for any advice you can provide!

Thanks so much :D so butter has a higher fat content, so it'll make your baked goods more moist and stay moist for longer. It's also firmer because of this so provides a little more structure to cakes (especially when creamed). In some recipes the difference may have more impact, and in others, less of an impact - just depends on how the batter is prepared :)
