i can finally say that i made perfect buttercream thanks to you! one helpful note for people who live in hot climates, make sure ur butter doesnt get too soft before beating and/or while u wait for the milk mixture to cool down. that happened to me and my cream turned into liquid that wont fluff, i fixed it by popping it in the freezer for five mins or so the mixed it again and it fluffed soooo beautifully

@@dianafaqihah8507 it honestly holds its shape quite nicely in room temperature during the hot summer months even without AC on -and i live in 40+ degrees weather- but i didnt get to test it being in room temperature for longer than an hour. the cream does become soft and airy though this time but it doesn’t separate or fall apart. hope this helps🫶🏻

I had made this buttercream recipe twice now and it's going to be my go to buttercream. I cannot believe how smooth, grit free, perfectly sweet this buttercream is. Just don't skip the 10 mins of whipping at the end that makes the difference. I did 7 mins and it was smooth but I could still taste the butter so I put it back for the extra 3 mins and like magic it was like a swiss merengue buttercream without the egg whites ❤️

OMG. I used the recipe this evening and it is smooth as silk ❣️. It's not grainy and it's not overly sweet. This buttercream just FLOWS out of the piping bag. And it's beautiful. Love it! I did add in an extra half cup of powdered sugar because I don't want too much butter flavor and I have a real sweet tooth. It was absolutely perfect.

I've used this recipe a few times now with great success! For me - a person that bakes like twice a year - the unsung hero is the technique that gets you out of sifting the icing sugar. That used to take me ages and this makes getting the lumps out sooo much easier. Love this channel ❤

Hey! 🙋🏻♀️🇷🇺I'm from Russia and I have a lot of familiar confectioners, So, I give you a recipe for a dense and stable cream, which is used by many confectioners in Russia: •400g cottage cheese (cream cheese) •100g of butter (82.5% fat content) •80g sifted powdered sugar Softened butter at room temperature (get it out of the refrigerator at least 3-4 hours before the start of cream preparation), mix together with sifted powdered sugar until the butter is lightened and fluffy, then add cold cottage cheese, beat for a few more minutes, try not to overdo it! If desired, you can add vanilla extract. If the cream has become too soft, put it in the freezer for 20-30 minutes in a pastry bag. Its moderately sweet cream, but perfectly delicious!! Just try Also, you can make cream for the layer of the cake, not the outer coating of the cake! •300g cottage cheese •150g whipping cream (33-35%) •70g powdered sugar. All ingredients should be very cold. Beat cream cheese with powdered sugar at medium speed of the mixer until smooth and homogeneous (do not stir for too long), leave aside. We take the whipping cream and whisk in a separate bowl until soft peaks, there is no need to whisk the cream tightly, because we will add cream to the mixed cream cheese and powder, and whisk everything together at low speed. It is important not to overdo it, because the cream may begin to delaminate. Good luck !❤

Can we use mascarpone instead of cream cheese? And i'm going to do an open Bible cake and would like to put a sheet of fondant on top to get the realistic effect is it possible to put the fondant on top?

@@veroniquetoolsee5524 hey. I haven't tried using mascarpone, so I can't recommend anything. But in Russia mascarpone is also used to create a cream for a cake, but in my opinion in a ratio of 1 to 1 with curd cream cheese. You can take a chance, but I'm afraid the cream for leveling the cake will not be as stable and reliable as when using cream cheese - cottage cheese is needed. I think mascarpone is suitable for the cake layer. I can't tell you about the coating with fondant either, because I'm not a professional pastry chef, sorry.

Thanks for the post ma'am,that's how my grandma makes her frosting she uses boiled water or milk cuz she doesn't like graininess in her frosting. Can you please rate this for me? Between 10-1 ... 10 being the sweetness level of ABC and 1 being the sweetness level of whipped cream frosting where would this fall? SMBC is the one I use most often due to the sweetness level as well as how much butter the recipe I follow uses (which is 3 sticks for 7 egg whites) That recipe doesn't leave that buttery film on the tongue/in your mouth. This one uses an entire pound which kinda has me worried. What would you say the 'feel' is like? Thanks in advance... 😉

If you also want to make your buttercream more stable you can dp half butter half crisco/other vegetable shortening to keep it from melting!

Hi there! So I would say SMBC is more stable because of the egg whites, but you can also substitute some of the butter in this recipe with shortening (not too much as you don't want to alter the taste too much!) and that should help with stability :)

This will be a great way to use confectioners sugar which has crusted due to improper grocery storage. I always have to check the shelves for the fluffy packs of sugar icing and avoid the ones that are( from the jump) hard or lumpy. Oh, and yes. Anyone may have old bags of loosely stored icing sugar in the pantry... Happens to be best of us. 🤭😶
