It looks very tasty, but as a French: we don't sweeten our dressings ;) (I think it's nice to use your tastebuds to more of the sharp stuff like acid, sour etc...) but I understand it's more and American version of the French dressing. in which case it's very accurate

First off I want to thank you for doing this because I've been looking for salad dressings that tastes like the store bought kind. My problem is that your husband did not really say whether it actually tasted like what he remember French dressing tasting like. He just made a judgment assessment that the other kind tasted like plastic. He's already used to your I'm sure he's already had this dressing. A true blind tester to assess taste would have been better. But I'm definitely going to try it for myself and I'll let you know.

I wonder if ground flax or chia seeds would make a good substitute for oil. A well known use for ground flax seeds is an egg replacement in recipes because of the similar texture. I am always looking for ways to add variety to my salads. I even tried using pureed soups, which are surprisingly good when mixed with fat free dressings. I look forward to trying your recipe. Sounds great!

Like the dressing. However, why don't you feel the need to rinse your salad greens? Please rinse them, or at the least spritz them with vinegar and baking soda in purified water. Packing equipment, or hand packers put the greens in containers. If you've ever worked in a factory environment you learn that inspections do not catch everything. You also have an honor system that employees won't work sick. Plant based means nothing if we're not doing it safely.

I'm sorry that I have to disagree with the positive comments being posted here. I thought the dressing was somewhat "interesting" in flavor, but was not close to the taste of french dressing. As my wife remarked, "If you didn't tell me, I'd never have thought this was supposed to be french dressing." The viscosity was, understandably, more like water, not like that of a french dressing, and the taste was somewhat bitter. I tried sweetening it with date syrup, and even added a pinch of salt, all to no avail. I can appreciate how difficult it is to simulate dressings that use salt, oil and sugar, but if this is an example of what is considered good, then I'm going to have a really hard time in sticking to this diet. Update: I have to apologize for my previous comment. I tasted the dressing today after a night in the refrigerator and it had thickened up and tasted much, much better.

"Healthiest diet on the planet" by dr. McDougall is also a great read. Same camp, slightly different insights, but by no means contradicting "How not to die(t)". Btw, contrary to the title, we *are* all going to die (at some point) ;-) Oh, and .. if your hummus is chickpea based, no need to add more 'extra protein' in the form of baked soy to your meal with two of those yummy globs of hummus.
