LEARN HOW TO MAKE AN EASY MAITAKE MUSHROOM RISOTTO RECIPE AT HOME TODAY!
LAY HO MA (how's it going in Cantonese)! I think this is one of those dishes that can be as humble or as posh as you desire. Join me in this episode and learn how to make an easy and deliciously savoury maitake mushroom risotto recipe right at home!
Ingredients:
3 cups veggie stock
1/2 onion
2 pieces garlic
150g maitake mushrooms (or oyster mushrooms)
3 tbsp olive oil
pinch of chili flakes
pinches of salt
1/2 cup arborio rice
1/4 cup white wine
pepper to taste
1 tsp chickpea miso
1 tsp chives
Directions:
1. Pour the veggie stock into a small saucepan and bring to a boil
2. Finely chop the onion and garlic. Hand tear the maitake mushrooms into pieces of similar size
3. When the veggie stock comes to a boil, set it aside. Then, heat up a sauté pan to medium heat. Add 2 tbsp of olive oil followed by the onions and sauté for 3-4min
4. Add the garlic and sauté for another minute. Add the chili flakes, salt, and arborio rice. Sauté for 1-2min
5. Add the white wine and cook for about a minute
6. Add 1/2 cup of the hot veggie stock. Give the rice a stir and allow it to absorb the liquid. Repeat this step until you are out of the veggie stock
7. In the meantime, heat up a nonstick pan to medium heat. Add and cook the mushrooms in the dry pan for about 3-4min
8. Season the mushrooms with salt and pepper to taste. Drizzle in 1 tbsp of olive oil and sauté for another 3-4min
9. When the veggie stock is used up, transfer the mushrooms to the rice saving some for garnish. Add the miso to the rice and give the rice a good stir
10. Plate and garnish with the remaining mushrooms and freshly chopped chives

Hi Wil, my job is basically cooking risottos in a restaurant all day 😂 and I have to say that your risotto looks amazing and really delicious, perfectly creamy and not over cooked! Simple recipes (especially with risotto) are always the best and tastier…less is more. Thank you for the nice video

Your recipe reminds me of a recipe for pilaf that we would make on The ranch in the Central valley when we would go out and pick fresh mushrooms out in the pastures. They only difference and your recipe in our recipe is the type of mushrooms you used and the type of rice you used and both are absolutely delicious.

Wow, thanks for the inspiration! I love all things “casual & humble.” Someday I’ll need to find & order some chickpea miso-it just sounds amazing & I kind of can’t live without some miso, no matter the bean. It’s one of my “big grocery splurge items” whenever I can afford it... so I’ll be making at least a “risotto-adjacent” dish today bc I have most of the ingredients; they’re just simpler & more commonly available in my area rn. Although my food is kinda never “ready for its closeup,” it typically tastes delicious to me & personally, I’m really proud of that. Sometimes I might actually try to make it pretty, but mostly it’s just function over form bc I batch-cook most of my food. So anyway, I’m really enjoying your channel & your dishes are always really accessible & if not entirely, it’s always easy to substitute ingredients. Thanks!

Your Risotto just looks amazing ! This is one of my favourite dishes (it probably comes from my 1/4 Italian roots) I have never seen these mushrooms but I do often with Oysters mushrooms I will definitely try to find all your original products to be as close as possible from your recipe

Chickpea miso is my absolute favorite. I use it exclusively. I love using it in many recipes instead of salt, it adds saltiness but also umami. I'm fortunate that there is a miso making company not far from me, so their products are available in local stores. Yummm.

Oh my gosh…just made this…so delicious! I couldn’t find the mushrooms used in the recipe, so I just used shiitake and cremini mushrooms. Never would have attempted risotto before, this recipe was a boost in my confidence to try…Thank you for sharing!!! 😋

That mushroom is stunning - no wonder you couldn't resist it! I'll try some organic white miso in my next mushroom risotto, although it's unlikely I'll find those gorgeous mushrooms, or the chickpea miso. You got Maitake at your local Cosco? You lucky dog! You lucky lucky dog!!! We're lucky if they get cremini here. Wil's amazing luck aside, and my having to settle for oyster mushrooms since that's what I had and we're lucky here to get anything more exotic than that, this is a holy matrimony of flavours having their reception in one's mouth. I love it. Simply love it, even with simple every day grocery store mushrooms. I haven't seen Maitake for a very long time, though we used to find them growing wild when we lived in the wild. The wild ones grow to absolutely massive sizes and look a bit like a pile of dead leaves at the foot of deciduous trees. For the mushroom hunters out there, they are also know as "hen of the woods" (not to be confused with "chicken of the woods"). Research has shown them to have excellent immune system boosting properties, and they have actually been used as an adjunct cancer treatment because they have large quantities of d-factor in them. That's the same chemical which makes sharks immune to cancer. It is thought that regular consumption of maitake can be a cancer preventative. The trick is the regular consumption bit. You very rarely see them in stores. They are not difficult to grow at home though, and you can buy fruiting bags or logs for them, though they tend to be a bit expensive. Final summation: This is really great even with sliced white button mushrooms, so cook up and enjoy!

Never made risotto before, can’t wait to try this! After work I always eat one of your ramen recipes by cooking it quickly in a microwaveable mug with the pack ramen noodles. I always look so forward to eating even though it takes me 5 mins tops. Thank you!
