I use the potato cooking water which is already salted and put into mashed potatoes. Makes them light and fluffy and not as heavy feeling in your stomach. I do use a bit of butter but since it is salted well already not much is needed.

First of all, I must congratulate you on your lovely cat top, Maddie! That's the kind of thing I would have fun wearing, too. Well, what a whirlwind of activity you are - it's amazing to me to think of you putting together such a festive feast in such a short space of time, really. I hope everyone thoroughly enjoyed it. It looks like most of the recipes in this video would make delicious eating at the same time as not being too exhaustingly challenging to make. Great job! I appreciate your content so much. It's a treasure trove of how to eat healthy vegan food without driving yourself to exhaustion. I am always impressed.

It’s on most days during December every year now. 😅 I’m glad the recipes are not too difficult … I definitely get overwhelmed myself with difficult ones and it would take a whole day for me to complete one. 😂😂 Simple is best when trying to eat healthy, although I do try to make it a bit more special during the holidays. 🥹

Thank you Maddie. Your recipes are always amazing looking. I maked some apple cider in my instant pot a while ago and I mashed up the apples and Oranges like apple sauce and it was delicious. In case you needed to know what to do with the rest of the fruit.

(Baking vs cooking to eat) For baking I usually recommend making a flax egg or using Bob’s red mill egg replacer. Let me know which you need and I’m happy to help!

I do find the thinner ones tie more easily than thick ones, but other than that you can choose any you like. These are a LOT of great videos. You should break it up into some shorts and standalone videos for easy searching! Can't wait to try a few of them. That apple cider is calling to me. A coffee house back at my college used to sell (non alcoholic) wassail - I think I can adapt this!

Absolutely! Here's the one I have and I love it, especially for the price: amzn.to/4aB5B8G The Ninja Creami is also quite popular: amzn.to/3GWbKhZ One of these days I need to do a full review between the two, but basically the Cuisinart is great for larger batches and you don't need to wait for it to freeze overnight. The Ninja is better for individual servings, but you need to wait 24 hours for the ingredients you add to freeze before eating. I have had great success with all forms of vegan ice cream in the Cuisinart, even lower fat options where I've used things like sweet potato as the base, still turn out great. Of course the higher fat (using coconut cream or cashews as the base) will always make a better ice cream so just keep that in mind for vegan recipes! Enjoy and Happy Holidays to you as well! 🤗

Thank you for all the amazing ideas and inspiration! such a great selection of dishes. 🥰 I am just wondering; you are using aquafaba as an ingredient quite often. Isn't it really hard to digest and does cause bloating? I am a bit afraid trying it in a hummus but it looks like it helos making it reeaaally creamy! 🙈

You’re very welcome! 😃 So with the aquafaba I’ve never had that problem myself … but it could be because I cook my own? I use a small piece of kombu (seaweed) when cooking and that is supposed to help with gas and bloating. If you are using canned aquafaba give it a try first and see if you have any bloating.. you may not! Another sub in hummus is ice water instead, it also adds some creaminess, but I do find the aquafaba makes hummus nice and fluffy because as it whips it fluffs into a consistency similar to egg whites, so I think it really helps with the texture. 🤩 Another hummus tip is to use more liquid than you think, you want to get it realllllly smooth in the blender and a bit more liquid can help! 😊

Love you, Maddie, but I felt that accessing the recipes to these things was harder than it needed to be. Could you please just post the direct links or the instructions, next time, rather than making us have to paw through a bunch of additional video descriptions (links to links to links), to find them? All of the food here looks amazing, BTW! I'm especially curious about the healthier sort of caramel popcorn, the chocolate bark, and the baked tofu.
