I have found that when I mix my chocolate melts, I don’t have the add in that you have, my chocolate melts melt smoother if I use a metal knife

They can last up to two weeks as long as they are in a cool climate area and not in the area where it’s humidity.

Why did you choose 280 cooking temperature versus the 300? Thanks!

As you cook longer, the mixture tends to brown darker so we’re removing it at 280 it helps achieve a better white color and not using so much food coloring to achieve white. This has always been my method for years, but these apples are chocolate.

So I have a video on my channel where I show how to prevent the elephant skin using almond bark or any other chocolate milk. Let your almond bark sit for about five minutes before you dip if it’s creating the elephant skin that means it’s too hot.
