That Ramsey desert is just a westernization of Sticky Rice with Mango plus the Lime, which might actually fit. But it also might not, because nothing can beat mango pure and ripe, except Durian.

There was absolutely no doubt that Patria should have won, as Moy's main course looked thin, watery and like something cheap and cheerful that you'd get off a street food stall knocked out at lunchtime for 30 baht. Patria's main course look rich, dark and flavourful. The starter of fish cakes looked good by both cooks, but obviously some customers didn't know that the Thai fishcakes are MEANT to be spongy and chewy and not as the British have them, crispy and golden, and perhaps that was why so many customers said they wouldn't pay. Unfortunately, Gordon doesn't realise that Thais don't really have puddings after meals. They will either eat fruit, or perhaps flavoured and coloured crushed ice with small jelly blobs, or perhaps with red beans cooked with sugar. The lack of decent decent desserts is the one area of Thai cuisine where it falls down. I know, believe me - I've live here for 12 years. A rice pudding would have been totally alien to both Thai cooks so I think they were both at a disadvantage having to cook something so alien. That seems obvious in the way that Mantana didn't really know what to do when the rice for the pudding was cooked. Remember that Thais eat rice as Westerners eat potatoes, and it is always rather stodgy. It's a different variety to Indian rice like Patna and Basmati and Thais don't like it with each grain separate.
