Skilled, no doubt about it. But there is this thing I hate about food street… cookers throw food to the floor all the time, they just don’t care about it, as if it were a nice thing to do. I don’t know other countries, but happens a lot in Mexico City. 😪

The whole Thailand seems to be cooking on KB5 burners, which make the heating output of 50,000 BTU. The fact that they do achieve wok-hei proves that this 50,000 BTU performance is sufficient for wok-hei.

I'm so happy to see that they wash the vegetables. Here in the country where I work, they don't wash vegetables like spinach and kangkong. They just cut the roots and toss them straight into the pan. so sometimes it has worms and sand.
