For me this is the moment the giantslayer starts to work out how the Giant's mind operates and that he isn't just a mindless beast, starting to use his own tactics against him to survive, but over the course of this coming to terms with the fact the Giant isn't a behemoth to be slain but just a man like he is, perhaps even worthy of joining forces with, growing in reluctance to kill him. So David (giantslayer) starts to become Goliath (becoming more empathetic towards a giant and adopting his tactics). Of course, Zack Hemsey is already David and he is already Goliath.

IMHO the music is way too dark for such a moment. It seems like David, after fighting the giant and freeing everybody from it, becomes the most powerful warrior. Having no match, he slightly decays to become a tyrant, abusing his new gained power, and making it a cycle. He is the new Goliath. Before that, it seems like the giants have being completely beaten. They could obtain everything by force, and now nobody fears them anymore because if they try to be agressive, David will slay them. They were at the top, and their greed made them lose everything, even their kind. They're now alone, way more humans than they ever have been before, because when your every needs are being satisfied by using the force, you're not human: you're an animal. So the entire "movie" would refer to that cycle: when you're freed from a threat, your liberator often becomes the new threat. Every man (or giant) being placed at the top with no competition will become a tyrant.
