When my Mom made gravy for her stew, she mixed the flour and water in a 2-3 cup size bowl, spooned hot liquid to flour mixture, stirring, and then poured this mixture back into the pot, again stirring. She prided herdelf in having no lumps.

In your title please put in "my version of..." Only because that is no where near the real Zanzibari mix. In TZ we add kachori, mskiaki, bajia, and then condiments added to each bowl per taste. It looks delicious though.

It is not Kachori it is small "Bateta Wada" and "Wateli Daar Na Bhajia" NO MISKAKI this is vegetarian dish and there is no condiments it's Moga ni Katri and Jugu Tarela and Tarela Powa with salt and pilipili with coconut and ambli and red chutney . And what she is showing is her version but it is pretty close because it is your choice what you want to eat. In Dar es salaam a lady makes perfect Zanzibari mix in "Kariako" starts early morning at 8am and is always busy.....

It is vegetarían, but it does not seem to be very healthy. Please, share some vegetarian healthy options for those who need to be very careful with their diet, like me. Thank you for taking the time to share. You should have a cooking to show. You are a very good teacher.
