You're so welcome! Just remember the monkfruit sweetener you add to the condensed milk will start to somewhat crystalize after 2-3 days in the fridge at the bottom of the container. Just microwave for maybe 30 seconds to warm it a little to re-dissolve. I notice that the longer I heat it to dissolve when making the milk the less crystals I get. I never keep the milk now beyond maybe 4 days before making some more.

Good video, very interesting. Question: Have you ever thought of substituting heavy cream (whipping cream) for the evaporated milk? I'm on a ketogenic diet, and evaporated milk contains 10% lactose, a milk sugar that does affect blood glucose levels the same way regular sugar does. Even a gram will kick me out of ketosis. Heavy cream is very keto friendly. Thanks!

Hi. I have t tried that with this recipe but I have used heavy cream in other latte recipes and it sometimes looks clumped or congealed. But that was probably due to the frothing of the cream. Heavy cream may work better in this recipe. Now I want to try it!
