I just tried this in my glass cup and can’t believe it actually worked! I thought my Long Jin would get bitter for sure. The only con is the liquid is way too hot to drink even after the 75 seconds. I added some cold water to cool it down. I’ll probably stick to 185f max if i’m drinking from a glass cup, but the 210f was actually still very delicious! I think this method would work better in a teapot since the tea will cool down once you pour some in a small cup.

In china i was at a teamaster. And she always put the hot wayer on the leaves for 10 seconds then pour it out. What do you say about this? Do you know? It was in hongzou.

Could you explain more about why you guys use boiling water vs ~80-85C? I find boiling water makes the tumbler too hot to hold. Good video!

Quality Chinese teas require boiling water to bring out the full/best flavor of it, especially the mouthfeel. But feel free to lower the water temperature if the tea is bitter or astringent when brewed with boiling water. Indeed the boiling water makes the tumbler hot and hard to sip from. If I want a ready to drink tea quickly, what I usually do at home is adding boiling water first, then cold water to bring down the temperature. But of course, you can always brew tea at your preferred temperature. :)

Buy and use Double Insulated GLASS Tea Cups, so you can hold it without getting your fingers/hand burnt. The transparent Clear Glass Tea Cups allow you to see what Color the Tea is, and that's also part of the Total Experience. Sip the brew, sucking in lots of air too, to cool it down, as you drink. That also helps the inside of your mouth, tongue, nose, and throat, to get all the aromas, flavors, and taste of this Tea. It's a really complex experience, but one that you will enjoy immensely, as it unfolds in your mouth and nose being sent on to your brain for the wonderful goings on!!!

A big lesson for me was that there is not one correct way to brew tea. There is no mess-up, only lessons. One can not learn without paying tuition.

good way to ruin your tea tried the difference you need to use more leaf for the same amount of water compared to brewing at 80 degrees so the result is you are using up more tea and getting less of what the leaves have to offer how do you square that circle?
