Hey guys, thanks so much for your recipe. Black bean is my all time fave sauce. I've tried this recipe (when you posted it with beef) and it works out perfectly. I always just sub in fried tofu instead of the meat. Spent so many years trying to figure out black bean and had some terrible mishaps with that jar of Lee Kum Kee black bean and garlic sauce.... it is not the same and is sooooo salty!

Help me Chin and Choo; you're my only hope! About your egg fried rice recipe, I note you recommend Green Dragon thai hom mali in the fried rice recipe video, but then in your overnight rice video you suggest a mix of long grain and thai. Which is it for fried rice? 100% Thai or the mix of long grain? Additionally, I'm having problems with my thai rice being very sticky in the rice cooker. Admittedly I'm using supermarket thai rice and this may be the problem, but I put in too little water and it is undercooked, too much and it is sticky and doesn't work in the pan. I've rinsed well and tried very accurate measuring but there seems to be no sweet spot - no problems with long grain but the texture is all wrong. Also, when putting the rice in the fridge overnight should this be covered or not to allow the moisture to evaporate? Love you guys x

Ziang's Food Workshop I think this is what our local do with either beef and mushroom or just mushrooms, dark thick sauce with lots of aged garlic, so much garlic it looks like the top of a snowball cake. Might be oyster sauce in it too. I’ll google and facebook if I find a pic 😺

@@ZiangsFoodWorkshop lmao I hope not... 1dtsp = 10ml, 1 dtsp(h) = 15ml (ish depending on angle or repose). So a 1:1.2 ratio based on potato starch would be 15ml of potato starch to 18ml of water or a baw hair more than 3.5tsp. But then it was joke lol we all knew what you meant. I made a verson of that for dinner... it was excellent. Probably over did the black bean though!

I’m talking mass, so the equlivent mass or more accurately the space in which it occupies, so it for example the starch filled up 10cm cubed you’d use 10cm cubes of water

I just checked and on the date you ordered it there was already a note saying that the original mid/end of april relesse date has been pushed back to due to the world health crisis, hope this helps
