I'm so glad I found your channel, I've learned so much after watching quite a few of your videos. One thing I was always told was light soy was for cooking and dark was a condiment to be used at the table, no wonder things were never tasting how they should be. You guys are amazing. Keep up the good work.

@@ZiangsFoodWorkshop I just cooked the beef chow mien (from your live stream 11 months ago) The meat, onions and mushrooms, I decided to add as well, were gorgeous, however, the noodles (asda brand as that's all we had in, prepared as per your video) didn't just taste burned, they tasted of rancid smoke, but only the noodles. I used my trusty 30 year old wok on a 2kw induction hob. I guess my question is, hob too high? wrong type of wok (very narrow bottom) or simply the wrong noodles (even though they were specially for chow mien)?

@@davekemp750 not enough oil would be my 1st quess, but store own noodles taste off to me anyway, like cardboard. With out seeing how you cooked it it's really hard to tell, could be the wok needs seasoning again, but more oil is the top guess

Prepping the noodles like this really makes a difference to the texture. I was just letting them cool down from hot, and they must have been overcooking. Thanks for this, much appreciated.

I bought some MSG from Amazon (UK) and *dry plain Chow mein* was gorgeous. Top tip: I boiled *thin* egg noodles and cooked half, other half in fridge for 2 hours. The fridge noodles were much better. They separated much better on cooking and were as good as my favourite takeaway (I love dry chow mein). Cheers ....basic ingredients thin egg noodles (blue dragon) beanspout, onion thin slices, garlic, soy sauce, msg.

I know you have lots of recipe requests but I’d love to see hot and sour soup ! The variation in this dish has the widest range of anything I’ve eaten in a Chinese take away. Keep on doing what you do, you two are amazing.

Thanks Chin and Choo a simple video but really helpful to show that the noodles should be rinsed, we have been using boat noodles for some time and they really are the best, they are not all starchy and great to keep in the fridge for the next day. They are also a good spaghetti alternative. Your channel is fantastic!! you keep saying it is not the best Chinese way but it is introducing a lot of us to so many different flavours that we might not have thought of like the black beans oh my what a wonderful flavour and smell! The the garlic paste is a godsend, the beef ternderising works so so well, The pork is delicious and the stock awesome As long as we are buying good ingredients then your methods are simple and produce a fantastically tasty and healthy meal every time!!! I think a lot of people just want to master the taste of what we know as a familiar chinese meal. Do not ever compare it to Mc Donalds again!!! :) Also thank you for taking the time to do this video, hope your hand is feeling a little less sore. Choo you seem to get younger in every video, you look like Chins sister now!!

Hey guys, great advice, bought a box from the chinese supermaket, it is a 9kg big cardboard box and they are all loose blocks inside. Can you tell me the best way to store them, am fairly sure if i left them in the box they would get attacked by mice or insects etc.

Huge difference, were teaching takeaway food not the best, they use friends it can be stored in bulk, in our own cooking we always use fresh

Hi, hope you're all well. Just a quick one. What's the difference between Lucky Boat no 1 and no 2 noodles. And what do you think the best ones are. I believe the no 1s are more salty so no need to add as much salt when adding the much needed msg. I'll be trying your chicken fried rice tomorrow and cant wait

My old takeaway in london used two diffrent types of noodles one was a lot thinner they used it in soups dishes these same noodles ive seen it used in chowmein dishes across the uk The other was thicker and used in chowmein dishes these are the ones i wanna buy Could you tell me if the ones i am after are luckyboat noodles number 1 or 2 i want to buy the thicker ones As i have tried in the past frying thinner noodles any i always burn them and stick to wok I prefer yo use medium noodles gor frying ive never burnt them

28 minutes up and 29 likes! Been looking forward to your next vid to land and here it is. I made roast dinner yesterday specifically with intentions to make your leftover singapore fried rice any time now. I have a recipe for salt and pepper seasoning but would love to see your version as the one i have im not sure if salt/5 spice/msg ratio is as good as it could be and i love salt and pepper wings

Odd place KZbin. I'm 70 odd and male, I have always liked cooking. I have tried Chinese food in the past and not really enjoyed it. However we found a small family run takeaway very near where we live. The difference was astonishing. We do get a bit naughty with the amount we get, we have been finding our favourites. £70 for 2 people is a bit high (birthday) - but fun. My daughter bought us a wok. Not a traditional one as we don't have an open nuclear furnace but a rather nice big heavy non stick one with a small flat bottom. I have attempted a simple Chicken Chow Mein and it was rather nice. All I wanted was to find a channel that went back to the preparation of the food prior to the wok. Yours was the only channel after half an hour searching that told me how to cook plain noodles. If you are cooking for just 2 people the items you get in the shops are too large. The only answer is a few days of Chinese food - hard life init. Beef Chow Mein - Pork Chow Mein - Shrimp Chow Mein - ? Chow Mein. Time to look at your videos I think. We will of course continue to use the takeaway, I could never produce say 8 different dishes in one go. Apart from that they a lovely people.

Thats the same as me and my fiancee, if we ever get takeaway we always order way more than we need and yes we order out because not cooking is amazing when you cook all day long. It good to support all local businesses especially if there good people :)

48 hours in the fridge if you cover them, if you don;t they will dry out

I couldn't get lucky boat but got, HONG BRAND SAI YUN (fine noodles for chow mein) and HONG BRAND LOO CHOO (broad noodles) both wheat noodles. Whats your thoughts on them, in the shop they told me they're very good.

Would you do 1 litre per pack? Or reduce it for, let's say four packs, to under 4 litre, so to maybe 3.5 litre of water?

Depends at the moment I can't dispatch, until the 24th Jan, but once dispatched normally 48 hours, however we use hermes and they take forever sometimes, we are trying to.fimd another company that can collect but because we're so rural it's a bit of a task.

you can but thats not what takeaways use, if you're trying to get the takeaway taste then you mist do it this way, lucky boat are the only good brand, no tesco own, blue dragon etc, they all have an odd cardboard flavor. But if you have fresh noodles then yes of course, its all up to how you want to cook, thats the awesome thing about cooking :)

I bought a Jamie Oliver Hard Anodised Tefal Wok. Didn't get it for the celeb nonsense. It's heavy, built like a tank. Non stick is very very good, food slides around like on ice. I use silicone spatulas and it still looks like new. Will rinse clean under a hot tap. They are not cheap but you'll never need to get another Wok

I just bougyt luckboat no 1 noodles But i cant cook them propely When doing chowmein they always stick together Any advice what im doing wrong In the past using cheap noodle i could cook them perfectly but they didnt tase good These taste greate but always mushy I just not sure what im doing incorrectly Thanks in advanced as you always give great help

I just bought the Lucky Boat No.1 Noodle 9kg. There are so many noodles in there. How do you store them? I mean, do I leave it in the box and use it when I need it ? or I should wrap the noodle in something plastic to preserve it?

Thin noodles only need 1 to 2 minutes in hot water, over cook them and they go sticky

The jars you buy when doing recipes I bought jimmys sate sauce things like that, some of them are in Chinese so I was struggling to get the correct ones.

Great question, wit out seeing it im guessing your not letting the noodle sit in place long enough, but like i said woth out seeing its just a guess

I'm guessing your heat souce isn't strong enough. A Chinese takeaway's wok burners are something like the equiv of 11kw. your best bet is an induction hob, a (£50)portable 3kw induction hob does fine for me, I can achieve a char. Also you need a well seasoned wok to give your food that essence of the wok flavour. hope that helps.
