To a former school cook, from a former teacher, now just a classroom volunteer ... I love you guys! I remember way, back, before you were old enough to be cooking when I was a young teacher. They made homemade cinnamon rolls for the chili and homemade hamburger buns. It's come to a lot less homemade, but you, mostly ladies, have a way with making sure we're happy when we leave that lunchroom. Thank you! By the way, I will be making this very soon. I have a helpful trick I learned when using grated zucchini to make fritters. After grating your zucchini, sprinkle some salt, but put the zucchini in a colander or on a clean dish towel. Wait about 20 minutes, then squeeze the towel and the juice will come out. Your squash will be ready to sauté.

Yes! No fingerprints! School food service, baker and cook, washing pots in hot water, unlacing racks from the dish machine. I don’t have any left on any of my fingers,! And loving them suck meatballs! This one is good to know, especially with the price of meats now in 2023! Be blessed, Miss Lori, and Mr B also!!

Hi Mrs Lori. I subscribed to your channel about 8 months ago and watch every new video y’all put out. I was raised on Good Ole’ Southern Home Cooking which is also my favorite foods. I will definitely try this recipe. Thank you for continuing to put out delicious and healthy dishes. I am going to enter my pickled beet recipe in our State Fair this year. I live in Texas so it’s a tough competition but this recipe was my Aunts who came from Mississippi. It was her moms (my grandmas) and is about 100 years old. I'm so glad a stumbled upon your channel. My mom and all of her family came out to the northwest about when I was born. I've never been to the south but my mother raised all of us kids on country cooking and that's how I learned to cook for a big family. my mother, her mom, and all of her family have passed away now so your show and lifestyle are nostalgic. They look incredible, I will try this recipe. My husbands family always put some type of vegetable in spaghetti sauce to make it stretch. Cauliflower, potatoes and even boiled eggs. Love watching❤️

Love meatless meatballs. I always make big batches and bake them off while zucchini is in season and freeze it. We use them for spaghetti, chop them up for pizza topping and lasagna plus noodles and sauce. Meatball sandwiches are really tasty. Anybody who makes these will surely enjoy them.

Hi Lori! Being a *mostly veggie* person myself, this is definitely a keeper! I sure didn't see the zucchini being sauteed prior to forming the meatballs coming at all!! Great idea to eliminate the excess moisture. I can even see this recipe becoming a "burger patty"!! TFS, stay safe, and God bless!! 🌈🌈🌈

You do have raw egg in there so should be well cooked.This is a great recipe.I love basil too! When there are well cooked tasty veggie ingredients, you don't miss the meat. Would also be great as substitute for falafel on warm pita with tomatoes, plain yogurt with sliced cucumbers or as a meatball sub!

Judy I really liked this recipe. I adapted it a bit to lower carb and increase protein. The extra egg helped hold them together better. For breadcrumbs I used the Mission brand soft low carb tortillas. I crumbed them in my Ninja! I used 2 eggs ( protein) and shredded parm instead of grated. They turned out great either way.

If you mix the salt into the raw grated zucchini and leave it to stand whilst you make the sauce, then leave it for 20 mins with a little weight on it, it draws out most of the liquid.

Hi Lori, been searching for open garden centers. Even large Walmart style stores. We don't have many of that type of stores. The garden shop part is close. Places like Aldi have a few. Its just like America. Everyone seems to be buying online. Cheaper and better quality. Love, Cee💚💚💚🍀🍀🍀

We eat meatless five days out of seven and our doctor is so happy with us All our numbers are in the normal range, even blood pressure, and we were able to stop all medications! We do eat meat on the Lord's day and celebrations as in the Bible days or when visiting and we are served meat.

I've been looking forward to making these since you first posted, and they are delicious! I halved the recipe since it was just me tonight and it worked fine. I did flip the "meatballs" over halfway thru to brown more evenly. I almost think you could roll them in extra crumbs as well before baking, being sure to watch so they don't burn. Thank you!

I can imagine these zucchini meatballs taste great! I make an eggplant casserole and love it too. It's made in layers and I make my own sauce. It's so good. But now you've convinced me to make these zucchini meatballs. My Italian husband will be pleasantly surprise. I'll let him eat them without telling him what they are made with. I knew right away I have to make this as soon as I can get some fresh zukes. My local organic store is making deliveries now so I am hopeful and wish to have flour as much as the good vegetables I am mostly relying on to last long, like cabbage, kale, carrots, turnips, etc. Thanks so much for the inspiration! @@Keachybean 2 1/2 c shredded zuc. let drain 45 min. 1 1/2 c bread crumbs...3 eggs beaten...2 t mayo...1 1/2 t Old Bay spice...1t. spicy brown mustard...1 onion finely chop....1 green or red pepper finely chopped...salt...pepper. combine all form into ball size of ice cream scoop flatten drop into little oil in pan cook med. heat until crisp. serve with tarter sauce.

Hey Miss Lori, my finger tips were the same way. It started when he had to hold the tail of a shrimp for beer battered shrimp over the hot oil till the batter puffed up. I used to say they couldn't catch me buy my finger prints if I did something wrong lol! I'm not a big fan of zucchini but I may try a summer squash sometime. JO JO IN VT 💕😄

I will definitely try this! One thing that I found that surprised me is substituting bulgar for ground beef (at least a partial substitution). I was making chili and only had 2/3 pound beef instead of a pound. I rounded it out with bulgur. I could not taste a texture difference. Like the meatballs, the spices covered the taste difference. I did add a little more liquid.

I can eat stew tomatoes right from can. When I make grill cheese with tomatoes. Onions in butter ground cumin salt pepper. Take those out butter ground cumin. Butter melts stir it add bread cheese onions tomatoes. Add the top piece then repeat the other side. butter ground cumin. Yum yum
