One thing I found can help me with getting water out of vegetables (or juice out of citrus fruit), is using the potato ricer. Wouldn’t be surprised if it would worl for this too. You could always put the zucchini/squash inside of a nutmilk bag, if needed. Easier to press the ricer together ithan wringe a bag/cloth, esp. if you have weak arms, joint problems oslt...

I watched this a few days ago and made these tonight. They were soooo good with potato wedges and a side salad. I found getting the mozzarella inside tricky because they didn’t seem to seal round the cheese and I fully expected them to fall apart in the fryer but they didn’t. I put mine in the freezer for 15 mins before frying to firm them up. Next time I’m gonna add some chilli flakes to give them a kick.

If you salt that zucchini after you shred it and let it sit for half an hour, you can get a lot more water out when you squeeze it.Salt draws the water out.

He’s a wonderful man . I would recommend anyone who is going to Italy for a holiday to visit his region puglia not tourist hot spot. But a awesome rustic region peaple live of the land and nearly everyone’s a cook there. When you drive thru the small villages you can smell all the incredible aromas from peaple cooking. Amazing tranquil and laid back region. A must if you love good food

Chef, these Zucchini meatball are amazing! Just finished them Win a side of chickpea pasta. I also took the left over Ricotta spinach meatball mix, roll them up, rolled in seasoned bread crumbs and fried them up!!! OMG good!

I just made these and they are delicious! I had to use gf panko bread crumbs and rice flour with a little bit of flax seed meal to help bind it. I was afraid they would fall apart in the hot oil but they came out perfect! My husband is so happy. Thank you so much for this wonderful recipe and videos!!!

When shaping the zucchini meatballs use a Ziploc bag cut into two pieces to help you shape the zucchini into a bowl without sticking to anything. Use your left hand to make a circle and place the plastic on top then plop your filling in and place another piece of plastic on top and poke your finger through the hole that your left hand made to form it into a little bowl to stuff and close
