You got the Pate Sablee and Pate Sucree techniques mixed up. Pate Sablee uses the creaming method and Pate Sucree uses the crumbing method. Sablee means sandy, this short, sandy, cookie texture is achieved from the creaming method whereas the crumbing method produces short, flakey pastry.

Thank you! I used your recipe several times and am reaping the compliments I add a tiny bit of cinnamon, and a generous pinch of salt. Also I make a larger amount and blend it a bit using a hand blender to make sure it's super smooth near the end of cooking.

For maximum brown butter flavor, add heavy cream to the butter and cook them together. This will amp up the production of the nutty brown bits

I would actually suggest milk powder if you want extra nuttiness, so easy and effective 😍

@ hi! Thanks for your reply. I actually tried with powered milk also, but i got better results with cream. Mainly because the brown bits are bigger in size using cream, milk powder creates very small bits that have the tendency to burn more easily ☺️ anyway, after I commented i made the madeleins using your recipe, and they came out fantastic! Fluffy on the inside, crispy edges, very light.. just amazing 👏🏻

Dextrose come from corn so is not the same as sugar and some people may be intolerant to it.

Can you help? I want to be able to coat my homemade ice cream shaped like an apple with coloured mirror glaze but it has to be cold to pour over it and I won't be able to leave it in the fridge to soften up. I have seen lots of ready-made glazes that say they can be used on ice cream, but they are really expensive to buy, and I don't need such huge quantities.
